Courgettes

I have two giant ones that FIL gave me from the garden. Any good recipes? I like them roasted with a bit of pesto, and we have eaten them steamed several times, but they get squidgy so easily when steamed. Any creative ideas? Should I try stuffing them?

Courgette bread or muffins

Stuffed with mince, tomato sauce or a veggie version ,stuffed with feta, tomatoes, onion, parmeasan bread crumbs

Ratatioulle- my favourite way to eat them

Chopped and added to pasta with cheese and tomatoes

They taste great in a curry or chili as well

I've never gotten food on my underpants!

I simply sauttee with olive oil and a couple cloves of garlic, salt and pepper. Make sure they get nice and browned though - that's where all the flavor comes in.

Sometimes when I make it like that I like to toss it with some angel hair and marinara sauce. It's like my dream meal!

ETA: Courgettes are my favorite vegetable. I really just throw them in anything. Put them in a stir-fry, or in fajitas or enchiladas! They soak up flavors beautifully and have the best texture.

Mmm... courgette bread.  :D Don't know if I can get used to saying that, though.

I happen to have a recipe I'm trying tonight that involves courgettes, but they only play a minor role:

Cheesy Stuffed Shells (I couldn't find the giant shells, so I'm using cannelloni instead)

I love love love the Pioneer Woman's Farfalle with Zucchini.  I make mine with asparagus and red peppers, too, and sometimes add in some prawns and bay scallops.

I've been meaning to try these, too.  *drools*  In fact, PW is my go-to site for "hmm, I feel like x tonight."  Here are her search results for courgettes. :)

OH, I totally forgot about zucchini courgette bread!!! I haven't had that in ages, and it sounds like just the thing (plus I have some over-ripened bananas so I could bake some banana nut bread while I'm at it!) I guess then I could take some back to FIL for sharing his crop with us.  :)
Does anyone have a good recipe for bread they could share? Otherwise I can just consult the Joy of Cooking (even though I have to convert all the temps and some of the measurements - blegh.)

It makes 2 loaves so depending upon the size of your courgettes, you might need to halve the recipe.

But honestly, for courgette bread, I'd stick to US recipes and convert.

If you really want to go all out, I'd make chocolate zucchini bread! Cooks.com, recipezaar, and most of those sites, as well as epicurious, will all have recipes I'm sure. I always chose one with a high rating.

A question for everyone, though. I find zucchini bread to often be very oily. Many of the recipes seem to call for a lot of oil. Does anyone have a recipe they use that doesn't use oil (and uses butter or something else?).

I was given a couple of big courgettes recently, and i made lemon courgette muffins, a courgette lasagne, and a green thai veggie curry (courgette, beans & brocolli).

The two I've got are massive. But yeah, I think I will take your advice and use the JoC recipe. The only problem is, when I convert the temps to C, I seem to never do it right. My stuff doesn't rise as much as it should. Any suggestions?
