The Pioneer Woman!

I've noticed quite a few of you follow her, so I thought maybe a thread on her recipes might be nice. There's not much of her stuff that I don't like, though I've not made nearly enough of it!

In addition to her site (http://thepioneerwoman.com/cooking/) she has a new forum up (http://thepioneerwoman.com/tasty-kitchen/) and a book coming out in late October (http://thepioneerwoman.com/my_cookbook/).

We're making the bacon onion cheddar biscuits tomorrow. I can't wait!

What's your favorite recipe so far?

I can't wait to make those biscuits!  I saw them yesterday and drooled all over the laptop. ;D

Like you, there's not much I don't like when it comes to PW recipes - off the top of my head, the favourites around here are the Farfalle with Zucchini, steak tips, the cauliflower soup, Marlboro Man's second favourite sandwich, potato parcels, the corn pudding, and pretty much any bakery item - especially the CINNAMON ROLLS!!!  My coworkers are addicted to them!!

I haven't tried any of her recipes, but her blog makes me drool.  :) Those biscuits sound amazing! Once someone tries them, let me know how they turn out (they sound like the ones they have at Red Lobster, which are so good!) I tried to make biscuits here once, but they didn't rise, so I don't know how to convert a US baking recipe to work with UK ingredients and ovens.

I have to give a thumb and a half up for her bacon onion cheese biscuits. We had them last night and they were quite good. Not as good as I'd hoped, but good nevertheless!

I also like her lasagne, mexican lasagne (though I don't like to use rice in it), chicken casserole, and her chocolate sheet cake.

The mexican lasagne is huge. It's a good thing to make if you want lots of leftovers in the freezer.

I think I'm gonna try her BBQ meatballs this weekend while we have my stepson. Has anyone tried those? They look delicious and sound easy to make. They seem family friendly (DSS loves anything with red sauce!)

It's pretty easy to make and keep handy in the freezer though!

Most of her recipes look delicious, but what isn't delicious when it's made with 2 sticks of butter?  :P  ;)

I made some last night, not like hers, really, but I sauteed some peppers and onions, added some chopped chicken, and then tossed in a small jar of the Old El Paso salsa they have here. Heated it up, then put it into the quesadilla with some jalapeno and garlic cheddar cheese (Morrison's - it's the best I've found for Mexican!). They were delicious, but she makes it look so easy to flip them, and they so weren't easy to turn over! I think I tried to put too much filling in, though, to be fair.

You make an excellent point there. Have you seen her mashed potatoes? Lordy, lordy.  :)

I have learned a few good tricks on there - like drizzling milk in the flour before you coat your chicken strips so the flour clings to them in clumps and adds texture. I might try that out tonight!
