Tomatoes + Chiles = ?
« on: September 17, 2009, 12:37:20 PM »
So, I got a load of fresh red chiles and a load of fresh tomatoes. I had the rough idea of maybe preserving/canning some sort of spicy tomato sauce or chutney, salsa, or something along those lines. I need help to further my idea along. Anyone have any recipes using red chiles and tomatoes that I could try? I will look up the preserving thread for more info once I get an idea of what to make. Thanks!!!

Fresh salsa, gazpacho, and for cooking, a spicy tomato sauce for pasta.

I have a salsa recipe that I've successfully canned. I can post it this evening if you'd like. :)

I really, really wouldn't try canning fresh (uncooked) salsa or gazpacho.

Sorry, misread her OP. I thought she just wanted things to do with them. Agreed, don't can that kind of stuff.

The pasta sauce you can just freeze.

Ok, I promise to cook everything first if I end up canning it. :) I haven't used red chiles as much as jalapenos and other peppers, so I was just trying to find some (cooked) salsa or chutney recipes I could use them in. I'm also up for any regular recipes, too (that don't involve canning). I just need to eat this stuff!  :) I also bought a bag of dried black beans (yay!) so I thought of making some black bean salsa or something, including the chillies and tomatoes. Any tried and true recipes? I feel like using the red chillies will just make me yearn more for fresh jalapenos (sigh).

All we've got is a load of green tomatoes that refuse to ripen! Anything we can do with them apart from green tomato chutney?

We've been making Green Tomato Pie.

http://southernfood.about.com/od/tomatoes/r/bl40625f.htm

I was dubious at first but it's nice, it reminds me of Pumpkin Pie in that you don't taste the pumpkin (or tomato in this case,) they just provide a medium for the spices and sugar.  You end up with something that has the texture of Apple Pie but tastes like Pumpkin Pie (well cinnamon and sugar really.)

The site also has a lot of other green tomato recipes which I've not got around to trying.
