Allergy diet (again)

My son has just been diagnosed with multiple protein allergies. The good news, which we are trying to focus on, is that after a year, we can reintroduce these foods and he should be able to tolerate them. The bad news is that for the next year, he's going to have a very limited menu. He can no longer have: chicken, eggs, milk, soy, treenuts, potatoes, tomatoes, rye, and oats. We are waiting to hear if he can have peanuts. We are also asking about turkey (as a replacement for chicken). And I also need to ask about other nightshades (eggplant and peppers).

So, we are trying to concentrate on what he CAN eat. He is VERY picky and prior to this diagnosis, we were finally making progress with a lot of foods he can now not have (cheese, eggs, etc). So we're kind of back to square one.

So I'm looking for ideas for what we can try with him. Any ideas are welcome and I'll be back to post some things as well in case it's ever of any use for anyone else.

I wonder if its worth your while to join your local Vegan society, I am sure there is something like that near you, or a forum. Maybe they can help with some substitutes for you. Good luck!

Thanks, Rach. He *can* have meat other than chicken. But he can't have soy and nightshades. Nevertheless, vegans may have some good ideas. Thanks!

Wow, that's a hairy list. Poor little guy - and poor you, too! :( I really hope the new diet will help him feel better and that feeling better might help with his pickiness.

The only suggestion that comes to mind at the moment is that coconut milk (I'd recommend the unsulfured kind) makes lovely rice pudding, especially topped with mango. Mmmm. Coconut milk and mango is a great combo for popsicles, too, if it's still blazing hot there. Fruit (and chocolate, believe it or not!) sorbets are pretty easy to make if you have an ice cream maker. I must be in a desserty mood or something...

Have you encountered Living Without magazine? It looks like it could possibly be helpful.

I know you like to cook and you're adventurous with food, so you have the skills to not only survive this, but to enjoy the challenge. At least some of the time. ;) I'm happy to help you brainstorm - I have some practice at coping with restricted diets, and I know it's much easier to come up with ideas when you're not directly involved. :-\\\\
