pretty sure the Sainsbury's Taste The Difference mince is steak mince, which will be too lean for making meatloaf.

Crap!  OK, I'll tell the husband to get the cheap stuff next time.  Thank you!

I use a mix of beef and pork mince and the fattiness of the pork mince keeps it nice and moist :)

I've always wanted to try it with pork.  I'll do it next time, thank you!

My meatloaf is often one large meatball, considering the ingredients I use are pretty similar.

Meat (I go lean)
egg
ketchup
salt
pepper
chopped onion,peppers
Worcestershire sauce (a smidge)
milk, sometimes (just for moisture)
bread crumbs
Whatever seasonings I have handy

Hmm..don't know what else.  It changes every time I make it!  Sometimes I do a more italian themed turkey one, and then I put a layer of mozz. and some tomato sauce in the middle, and bake it up.

YUM!!!  I wish I could do that!  Husband hates both the cheese and tomato sauce :(

Well, that's upsetting!  My boyfriend doesn't like mince in general (so that kind of rules out the meatloaf, meatballs, etc) so I haven't made it yet since moving.  It's so tasty and like, cozy to eat when the temperature drops.

I know!  It stinks!!!  I didn't tell him about the mayo in it last week till after he was finished.  He laughed and thanked me, but still liked it.

Try a few carrots. I grate mine and add to the mixture. You can grate course if like pieces of carrot, or grate fine and you'll never know it's in there.

I never bake in a loaf tin. I always form it on a baking tray. Then you get a crust on the sides as well as the top. I love the crust.

I also bake it for 10-15 minutes and then I spread on my mustard/tomato puree/brown sugar topping. I don't like putting the topping on for the last 15 minutes.

And mine always comes out moist. DD hates carrots, DS hates tomato puree. They both love my meat loaf.
Still tired of coteries and bans. But hanging about anyway.

I put all the veg into the food processor:  onion, garlic, red pepper, carrot and a piece or two of bread.  Puree it all.  Add 1/4 cup  ketchup and 1/4 cup milk along with worcestershire sauce and some thyme.  Mix it all in with the ground beef (take the veg mix out of the food processor and mix into the meat by hand)  I use lean beef.  It is a very moist meatloaf.

I found a recipe online once for the "Ultimate Meatloaf".  I made it once and it was the most amazing meatloaf I have ever had.  It is so moist and full of flavour!  The problem is that it is time-consuming because of all the preparation involved.  But I kept the recipe if you wanna give it a go.

3 tbsp butter
3/4 c chopped onion
3/4 c chopped scallions
1/2 c chopped carrots
1/4 c chopped celery
1/4 c minced red bell pepper
1/4 c minced green bell pepper
2 tsp minced garlic salt
1 tsp ground black pepper
1/2 tsp ground white pepper
1 tsp ground cumin
1/2 tsp ground nutmeg
3 eggs, well beaten
1/2 c ketchup
1/2 c half & half
2 lbs lean ground beef
12 oz sausage meat
3/4 c fine fresh bread crumbs


Preheat oven to 375F

Melt butter in heavy skillet.  Add all vegetables and garlic.  Cook until moisture from veg has evaporated; about 10 min.  Set aside to cool, then refrigerate, covered, until chilled, about 1 hour.  

Combine salt, pepper, spices and eggs in mixing bowl, beat well.  Add ketchup and half and half.  Blend.

Add ground beef, sausage and bread crumbs to egg mixture.  Then add chilled vegetables.  Mix thoroughly with hands, kneading five minutes.

With damp hands to keep mixture from sticking, form mixture into an oval approx. 17 x 4.5 x 1.5 inches.

Place meat in a baking dish and place that dish inside a larger pan.  Pour boiling water into the larger pan until it reaches halfway up the sides of the baking dish.

Place pan in oven and bake for 35-40 mins.

Remove baking dish from water bath and let meatloaf rest for 20 minutes before slicing and serving.

I think it keeps it moist.  I didn't actually write the recipe, only found it and tried it.  It was really really moist but not falling apart which I loved, but that could have been from all the veg or the half & half too.

The sausage is a great addition I think, for the flavor.  You could use pork sausage or Italian or any flavor you like.

It is - I recommend using a processor or some kind of chopper to make it quicker.
