Pumpkin Pie Spice

If you have a recipe that calls for pumpkin pie spice, but you don't have any, how do you substitute for it?  I'm thinking cinnamon and nutmeg, but is there anything else?  Or is that wrong?  I've never made pumpkin pie or used the spice mix, so I have no idea.  Thank you!

I would think cinnamon, nutmeg, allspice, and maybe some ginger. But I'm just guessing.  ???

people often add ginger, cloves, and/or allspice as well. I tend to mix it up differently each time!

Penzey's pumpkin pie spice (one of my favorites) is a mix of cinnamon, allspice, nutmeg, ginger, mace, and cloves.  Use equal parts.

The Penzey's blend is what I would have recommended as well.  But beyond that, I've always found that the best advice for trying to season anything is to just start smelling things.

If something smells 'right'-- i.e., the scent reminds you of spaghetti sauce, chili, apple pie, etc.-- then it'll probably be a good addition. :)  I started randomly sniffing my mother's spices when I was just a kid (kind of makes me sound like some sort of addict), and this hasn't steered me wrong yet.

I always use ginger, cloves and cinnamon.

Cinnamon
ginger
nutmeg
all spice

I looked it up last week as I want to attempt pumpkin fudge and need it. I found that a substitution is, for one teaspoon:

1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 sp ginger
1/8 cloves

I don't think I'll mention all the *new* Pumpkin things Jello have come up with that I saw (and bought) when I was back in the states then.   ;)

OK, question about cloves, do they do them ground up?  Or are they always whole?  I just know most of the time cloves are whole, but that does not seem right to me in a pie.

You can find them ground! Definitely don't use whole ones!!  :D
