funny, i was thinking about baking some today! my mom has a really great recipe....I will give her a call and see if she can find it!

One of my favs!  I made this recipe last year and gave it as gifts at Christmas to my Scottish inlaws who loved it.  It's best after a day or so, chilled or toasted with cream cheese.  Heaven!

Zucchini Bread

3 eggs
1 cup veg oil
2 cups sugar
2 cups grated zucchini
3 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1/3 cup baking powder (sounds a lot, I know, but trust me!)
3 tsp cinamon
1/2 cup chopped nuts (optional)

Combine eggs, oil, sugar, zucchini and vanilla.  Mix dry ingredients and blend with wet mixture.  Blend well.  Stir in nuts, if using.  Grease and flour two loaf pans.  Bake at 350F/190C for one hour or until a knife inserted in the centre comes out clean.  Cool on wire racks completely and wrap tightly in cling film.

that sounds close to my recipe wishstar...so will not add mine here...  that recipe goes well with apple bread also...

Mine is about the same too, though I often will add 1/2 cup crushed pineapple as well...yummers!!

YUM! I've never thought about that, I'll have to try it the next time I make it - I use my mom's recipe, but don't have it here. :) I still can't bring myself to say "Courgette Bread" though! :)
I'm done moving. Unrepatriated back to the UK, here for good!
