Panera Cheesy Broccoli Soup
« on: February 19, 2010, 03:39:18 PM »
Some one sent me this recipe and I thought I would share it.  We made it last night and it does a very close representation of the cheesy broccoli soup from Panera/ St. Louis Bread Company.  I wish we had the same quality sour dough but none the less it was quick and something that you can get all the ingredients for in the UK.  I don't think it would meet anyone's good diet restricts but it was very tasty.

I LOVE Panera!!  It's one of the places I like for a quick lunch.

Now, can you get the recipe for their cinnamon sugary bagels??? Not a fan of Panera in general, but I do love their sweet bagels!

Seriously racheeeee, I had totally forgotten about those bagels.  Oh yummy - we have no bagels here - I have given up trying what passes as bagels.  I may at some point try making them myself but as I had never done it in the US, it will take a good big craving to motivate me to do it here.

I made bagels when living in the UK. I used Nigella Lawson's recipe from How To Be A Domestic Goddess and they were awesome.

Sorry everyone, but as a nice Jewish girl from Long Island, I can't really bring myself to eat a bagel outside of the New York Metropolitan area...so I either have NY bagels brought from my parents (preferably Bagel Boss Flagels from either Merrick or Great Neck) or its no bagels at all I'm afraid....colour me spoiled!!! My parents always bring a dozen or so with them when they come to visit, so I almost always have some in my freezer!

LOL! Nigella's recipe comes from a nice Jewish guy from NY if I recall correctly!

Thanks for this! I'm going to definitely miss Panera. For those in the States, Sam's Club sells Panera-labeled broccoli cheddar soup by the cheese/lunch meat/packaged pizza section. It didn't quite taste the same to me though, but if anyone tries it, I'd like to know what you think.

We are trying the recipe tonight so I will let you know what I think, though the BF is making it and I swear he has an inability to follow recipes, he ALWAYS thinks something is wrong with it  ::), so who knows how it will turn out.   ;)

Thanks for sharing the recipe!

I miss Panera - it was my first "real" job.  Gah, don't mention the bagels,    [smiley=bigcry.gif] I miss all the lurvely flavoured cream cheeses!

Thank you for this recipe! Ever since I saw it I've had it in mind. I made the soup last night. I have to say, I nearly cried with delight! It was delicious... even better today! What I would give for some sourdough though!
On a different note, I also made chocolate chip cookies and they turned out very cake like. I am so bummed. I wonder what I did wrong?! I wonder if it had to do with the flour I used?
Follow your bliss.
