Rhubarb - I want to like this vegetable, but for the most part, I don't feel the love.  :-\\\\  (It's probably my sweet tooth getting in the way, what with rhubarb being so tart.)

One thing that Steve makes with rhubarb that I do like is grilled mackerel with a slightly sweet rhubarb puree as a sauce to go alongside the mackerel.

Today I made a rhubarb cake - will report back on that shortly.  :P

ETA:  The cake was good!  Plenty of sugar to offset the tart rhubarb.  :)

Is that a Nigel Slater? I saw him doing something like that on his leftovers show the other day, he also did a nice looking rhubabrb tart with a custardy mascapone, the mascapone looked lush -  it was this episode - http://www.bbc.co.uk/programmes/b00mql0v

Meh. I don't really think I like the flavour of it. I've had some pies and things with it, but it just has such a weird aftertaste for me.  :-\\\\

I don't feel the love either. My housemate made an apple and rhubarb crumble once and I just picked out the apples.  :-\\\\ I've tried it pureed and as hard candy and I just can't get into it. I agree with Jewlz that I just must not like the flavor.

Yes I think he got the original inspiration there, but he kind of went his own way with it - not following Nigel's recipe per se.

I love rhubarb!  It's always been one of my favorites.  Which is lucky, since due to the size of the rhubarb patch we had in the garden, I'd have been eating it anyway. :)

One thing I've always really liked is a rhubarb sauce, served warm over vanilla ice cream.  Basically, you just slice the rhubarb into smallish chunks, then put it in a saucepan.  Cover it with water, then add sugar to taste (usually quite a bit) and whatever spices you'd like (cinnamon, nutmeg, etc.), and a little lemon juice.  Then just cook it down til it's nice and thick, like you would with applesauce.

I love the forced pink rhubarb that's out early in the season - so tender, sweeter than usual and a fabulous colour!  The later stuff can seem stringy, tart and has that odd dry feel against your teeth  Crumble hot with cold ice-cream is my favourite.

We must have a later variety in our garden because the above describes it. When I first prepared it I thought it was going to be a lovely pink colour...
 Think I need to take a trip up north!   ;D

Yes, I knew about the rhubarb triangle & presumably that's the kind of rhubarb we're getting right now.  Like the idea of the rhubarb triangle!  (better than the Bermuda Triangle!)  Steve loves rhubarb, so I'm trying to develop a taste for it!
