Breakfast camping ideas?

Next weekend we're going group camping in Epping Forest to celebrate a friend's birthday. Everyone is taking turns cooking and we volunteered to do a breakfast. The current numbers are 4 vegetarians and 11 carnies (LOL). We will definitely have a campfire to cook on and I'd prefer to use that instead of the one small gas stove if I can.

But I'm not sure of what to make, as it'll need to keep okay in our coolbox from the evening before, and I'm not sure if there's a means to suspend our cast iron pots OVER the campfire (I'm still waiting for someone in the group to offer a solution for this!).

So we'll need one or two options that would suit veggies and carnies, won't spoil, and can be cooked over a campfire.

My ideas were:
* big vat of porridge and bring dried fruit and nuts for people to customise theirs
* scrambled eggs (or will the eggs not keep or transport well in a coolbox??) then have people toast their own bread on sticks over the fire
* bacon sarnies, ditto on the toast (but we don't have a giant griddle suitable for a campfire so I don't know if they'll work in the cast iron saucepan...?)
* or maybe just bake a bunch of muffins in advance and bring butter & jam?
* there IS a kettle so teas & coffees are covered!

Has anyone done anything similar that they can offer advice and/or ideas? I'm afraid I've only ever gone festival camping before so not done the campfire cooking before (but I'm very handy in the kitchen and grill under normal circumstances!).

Your eggs should be okay as long as they're fresh & the weather isn't too hot.  After all, they're not refrigerated at the grocery store here.

You could do breakfast burritos!  With eggs, onions, chilies (add sausage) etc...serve in tortillas with cheese, salsa, etc.

Get some Bisquick & do some kind of eggy, cheesy (and/or meaty) casserole-y kind of thing with that.  (Google for some recipe ideas.)  Think like a rough breakfast pie.

I agree-- eggs will be fine.
I think I would go with a cooked breakfast, not the muffins-- people like their cooked breakfasts :)

no great suggestions sorry--but I like the breakfast burrito idea a lot! I am a picky eater so always like ideas that you can add in or leave out what you want.

Ahh, I totally failed to mention that a bunch of the people will be kids (and I'm pretty sure I'm the only non-native Brit there), so the onions and spice aren't going to go down well, unless I separate everything out and do it buffet style. But I really like the tortillas, as that would simplify the toast thing! Maybe if I just did the scrambled eggs in tortillas and offered salsa and shredded cheese to put on top... :/ Hrmmm. And perhaps a bit of chopped up chorizo as another optional add in for the carnies. At least that way I only have to dirty one pan...

This is my problem - I love breakfast. I could eat breakfast foods all day, every day, for every meal. But whenever I'm with Brits, it seems they only ever want the same, boring fried breakfast. :( I suppose I can't please everyone, and if they don't like it they hike to the nearest cafe!

You know, I like fryups - I really do!  But they don't like me.  I always feel sick for several hours after eating one.   :-\\\\

I think you should do the separated-out burritos!  :)

They're camping!  They should be willing to be adventurous, no?

My mom always cooks a breakfast casserole thingy (like a quiche/omelet type thing) in a cast iron pot on the fire when we go camping.  She mixes a bunch of eggs and milk and bread...then add whatever you want to it (sausage, bacon, peppers, onions, etc - anything you would put in a normal omelet or quiche).  She makes it the night before because the eggs and milk need to soak into the bread and she puts the pot directly onto the fire.  It's delicious and has always been a big hit.

I was thinking you could do a quiche or casserole that you make at home, bring up in the cool box, then serve at room temperature for breakfast along with muffins or croissants. Personally, if I had to make my toast on a stick, I wouldn't bother! Unless you have one of those genius wire things that are specially made to make toast over a fire. When I make (or buy) bacon sarnies, I never toast the bread, so I wouldn't worry about that too much. The tortillas are a good idea, but it might freak the Brits out! You could do a pan of beans for the kids.

The camping trip was this weekend and the breakfast burritos when down a TREAT! Really well received by everyone involved, and we got loads of compliments on what a great idea it was (don't worry, I didn't take the credit!).

We ate so well over the weekend - Friday night's dinner was a curry extravaganza with basmati rice, gorgeous chicken saag, mutter paneer (cheesy peas) and a vegetable curry, plus parathas grilled over the campfire. And then Saturday night's dinner was Basque chicken (with a Basque mushroom pot for the veggies) - whole pieces of chicken with a red wine and tomato sauce with chorizo, peppers, onions, and big black olives, also over rice. And lunches were all homemade and shared around, too.

Good thing we went for some long hikes to work it all off!

Pankakes...lil hard top do do on a grill but, taste so good in the outdoors...Have fun

Yup! The burritos were grilled over the campfire (they went SO quick!) and I did the eggs on the camp stove in the end since the heat control was easier and it was less likely to singe my arm hair while I stirred it! I did two lots of 15 eggs each in my big Le Creuset, then had everyone grab a tortilla, I dished up some eggs onto it, and then everyone put on their own add-ins. Then devoured! ;D

That sounds great.  If only I'd been there...   :D  I love breakfast foods.  So much better than lunch.
