I second the ghost walk suggestion, they are hokey but entertaining. The stories are slightly morbid though!
Next to the minster is the guy fawkes inn, which is cool place to stay, but you can also just go into the bar, which is super old school and gas lit. Cool ambiance.
York is awesome all around, keep in mind a lot of the stores close early like 4 or 5pm- have fun!
