Cooking bass

DH went bass-fishing with a friend last night and came home with a 4 lb whopper! I want to roast it with lemon, wine and lots of herbs, but am not sure how long I need to cook it for or at what temp. Any ideas? (The 4 lbs is before gutting or taking off the head, so it'll likely be a bit less.)

I can't give you an exact number for a fish that big, but if you marinate it in lemon juice ahead of time, it will cut down on the cooking time.  I'd cook it at 200 C until it flakes easily with a fork.  I never time fish.  I just cook it until it's done, as it's easier to keep an eye on it.  I am guessing a half an hour to forty minutes.

Thanks, Legs! That's roughly how long I thought, but I couldn't be sure. All the recipes online seem to be for much smaller fish!

Wow, that's a big fish.  Well if you can't figure out the cooking time (I have no idea, lol, I just cook fish until it appears done on the inside)-you can always fillet it up-

Update: It was fantastic! I stuffed the cavity with lemon slices, dill, parsley and thyme. Then drizzled the top with olive oil and poured some white wine over it before covering the pan with foil. It needed a good 45 minutes, but it was delicious!

I think it's pretty expensive to buy. DH said that a wild whole seabass of the size of ours would be £30-40.  :o

(Oh, bay leaves too. I put bay leaves in there.)
