Caramel Pie anyone?
« on: October 08, 2010, 05:19:17 AM »
hi all!

a GREAT recipe to share!

when I last saw my boyfriend in the UK I shared this recipe with his mum
and I made it for them

and it knocked over the treacle pudding for #1 in his house!

first
peel off the labels of TWO cans of sweetened condensed milk
DO NOT PUNCTURE OR OPEN!!!

instead, submerse them in water in a big pot on the stovetop and boil both cans for a total of   3 1/2 - 4 hrs. Made sure to kee adding water to the pot to keep it boiling and the cans submersed as the water steams off!
after that amount of time, CAREFULLY remove BOTH cans with TONGS and let cool for 15 mins.

for the crust, use a sleeve of graham crackers, finely crushed!
no graham crackers? use Digestives! a whole sleeve!

crumble them into dust
add a stick of butter and a cup and a half of sugar

mold it into a 9" round pan

time to open the cans!

pick up each can with a towel
keep the side you choose to cut OPEN faced DOWN into the pie crust
it will be HOT and if it shoots out it may burn you!

slowly and carefully open each can and empty contents into the crust!
you will find the swweetened condensed milk has turned into pure CARAMEL!!

spread the contents of  BOTH cans around until even in the pie shell

freeze overnight and serve with fresh quirty whipped cream!

trust me
its a dessert sure to win EVERYONE over!!!!!!!!!!!!!!!!!!!!!!!!!!!!

You know you can buy the sweetened condensed milk here, already turned into caramel in the tin (Nestlé Carnation Caramel), and skip this step:

peel off the labels of TWO cans of sweetened condensed milk
DO NOT PUNCTURE OR OPEN!!!

instead, submerge them in water in a big pot on the stovetop and boil both cans for a total of   3 1/2 - 4 hrs. Made sure to keep adding water to the pot to keep it boiling and the cans submerged as the water steams off!
after that amount of time, CAREFULLY remove BOTH cans with TONGS and let cool for 15 mins.

You'd probably also like Banoffee Pie, which is a pretty popular dessert in the UK.

I was always told it was really freaking dangerous to boil cans of condensed milk, you can get hot/cool pockets inside which can explode boiling sugar milk at you when you open the can.

Yeah, sorry, but I wouldn't do this. It isn't worth hurting yourself or someone else who might be standing around. It's really easy to just reduce it in the pan as mentioned in the links above by bookgrl, or use another method. It would be sticky and hard to get off the skin, too, which means it could cause even more severe burns than even boiling water, I'd imagine.

I've boiled tins of condensed milk oodles of times without a problem, as have friends. I've never heard of an accident. Not saying it doesn't or can't happen, just that I don't think it's all that common.

However, now that the pre-caramelised tins are available, I'd rather just buy those. It saves a lot of bother and tastes exactly the same.
