Spinach Salad with grilled chicken, extra salsa basilico, black olives, fresh mozzarella, fresh tomatoes, fresh basil and honey mustard from 'old' work upon my holiday return this evening.  ;)

Chicken enchiladas and chips

We were going to have Chicken enchiladas but ASDA was out of stock dang it I really wanted them as well  ::)  :P so we decided on baked taters & roast chicken.

I had a nice Italian meal last night

Tonight is the first of many Christmas do's- I am not sure what I am going to pick tonight from the menu

Inspired by my Greek friend, I'm making Keftedes (Greek meatballs) and fried potatoes with tzatziki sauce.  We've learned tzatziki goes with fried potatoes because we always forget to get bread when she makes it. 

I've also learned two greek words now in case I ever need to read a menu in Greece again.

κεφτέδες (Keftedes)
τζατζίκι    (tzatziki) 

I think the words look prettier spelled in Greek.  :)

We haven't had a kitchen in over 2 months ( :-\\\\ father-in-law's country house is being remodeled), so it has been a mission in figuring out what is nice, yet microwaveable.  Tonight: chicken tacos, the meat cooked on a sandwich press!

Yesterday my mother made meatball curry. Tonight will probably be something easy like eggs and bacon or mac and cheese. Tomorrow will probably be fast food as I have to go to Delaware and will be on the road.

DH is cooking tonight - I think he's going to do a curry with some leftover lamb from Sunday & maybe some curried veg as well.
