Chicken Kiev, mashed potatoes and roasted broccoli.

I was in a 'canna be bothered to cook but want something nice' mood-
So I made a quick dish- pasta with yellow/green courgette, swiss/rainbow chard, tomato and a basil cream sauce.  Came out lovely and took 15 minutes to make!
I've never gotten food on my underpants!

Lol! I'm headed to the US in a few days so I am really stretching to use up the food I have in the house. I'm not sure these 2 recipes go together, but they both came out great! Hope you enjoy. :)

I only made the balls although next time I will try the sauce too. This made about 28 balls and they look like they will freeze beautifully!

I carmelised onion and left out the bread and creamer as it was thick enough. I also didn't bother to peel the apples or potato as I like to keep all my nutrients.

That's one of my favorites too!

We're having leftovers from the week - leftover pizza, chicken/leek pie, and whatever else I can drum up. I'm also making DH some roasted vegetable soup for the week and it's likely he'll have a bowl tonight.

I have lamb moussaka in the slow cooker. I hope it's good! Instead of the cheese sauce the recipe calls for, DH is picking up some feta cheese to go on top. :) We'll probably have some steamed broccoli with it.

Unless DH walks to the shop, we're having pork chops, risotto (from a box), and canned French-style green beans. We have no fresh veg and need to go to the grocery store.  :P

DH went to the shop! He made a recipe from Cooking Light. It's a chicken breast stuffed with blue cheese with a buffalo and roasted pepper sauce. It was delicious!

Leftover chicken fajita innards (chicken, peppers, beans) with home made wedges and maybe some broccoli too

Chinese Spinach Mushroom Soup

http://www.epicurious.com/recipes/food/views/Chinese-Style-Spinach-and-Mushroom-Soup-4805

Came out very nice and easily adaptable for carnivores or gluten free folks!

Still trying to whittle down my fresh food stash before I go to the US. I've managed to get down to 4 mushrooms and a small onion.  ;D

We had quick and easy soup - just open and microwave - pumpkin for me and carrot and coriander for him.
