I am basing my meal around baked sweet potatoes, as we have a bag of sweet potatoes from before vacation, which still look good! But they're the only thing that sounds appetizing to me right now... Suggestions are welcome!
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Oh that looks so yummy! I am bookmarking it. My in-laws would not touch that. They complain when I make my sweet potatoes (which have a lot of the same ingredients, except I boil them, fry them in butter and black pepper, and then bake them in brown sugar and maple syrup... and extra butter), but DH has come around to them and so the two of us just eat them all up ourselves.  ;D The chipotle would add such a great kick.


I think I've settled on a veggie curry (probably thai) since I have all the ingredients, to top the sweet taters. I don't have much left since I've been in America for 2 weeks and the grocery store has been a zoo.

I always make them into fries, spray them with olive oil and coat them in spicy BBQ rub and bake, mmmm!

But these twice bakes sweet potatoes look lush!

Burger patties, mixed veg and new potatoes. And DH made some ace gravy to go with everything. :D

I love putting sweet potatoes in my curry! Yum.

I baked all 6 sweet potatoes.  :-X Trying to have some leftovers to make quick dinners for the rest of our first week back to work. But I can't view that twice baked stuffed potato recipe. Do you need an account for that website perhaps?

Recipe -
The one complaint I have with sweet potatoes is that the flavors are never balanced well. They always lend towards the sweet than the savor. So I created a recipe that included butter, mascarpone, and pecorino romano cheese - just the perfect recipe to dangle in front of your spouse when you are going to be away for a while.

Twice Baked Stuffed Sweet Potatoes
4 large sweet potatoes
6 oz mascarpone
2 oz unsalted butter
1/2 cup Pecorino Romano Cheese
Salt and pepper to taste

Bake sweet potatoes at 350 degrees for about 45 - 50 minutes or until cooked through. Take out of the oven and let cool for 5 minutes. Cut potatoes in half and then scoop out the sweet potato (leave the skin and shell) and put in a mixing bowl with mascarpone, butter, cheese and salt and pepper. Use a potato masher and mix the sweet potato mixture together. Add back into the potato skin with a spoon (or put in a piping bag with a large tip) Bake at 350 degrees for another 20 minutes

Currently grilling thick cut pork chops with a BBQ rub, and making some homemade garlic and cheese mashed potatoes.  I'll probably steam some broccoli too.   Yummy!

My hubby-to-be can't wait for me to cook for him again!
