I do have homemade stir fry sauce in the freezer for a lazy day, though I don't have any meat out for it... Veggies currently in my fridge are: red cabbage, carrots, parsnips, and fennel. Dunno how good for stir fry the parsnips and fennel would be...

I have homemade steak and ale pie filling in the freezer. Would a bisquick crust be good with that?? I could just throw some veggies in to roast at the same time.

I think that pie and roasted veggies sounds great. You could also just heat up the filling, eat it like a stew and make some simple biscuits to go with it, if you don't feel like making it into a pie.

That's a really good idea! I have the pie filling/stew defrosting now and veggies in the oven. I'll throw some biscuits in the oven 10 min. before dinner... Job done. Thanks! :)

I've got chicken and lentil curry in the slow cooker.  It will be served with cucumber yogurt and chapatis.  I love when the hubster goes through my cookbooks and finds things he wants for dinner. :D

Last night was leftovers (from the freezer) of pb's yellow lentil and carrot hot pot (hubby really likes it).

Tonight is a spicy Italian-style veggie and puy lentil stew with a bit of barley in it as well.  I'll probably thrown in some cut up veggie sausages, too.

Tomorrow will be something I haven't made in a while; my spicy peanut sauce with stir fry veggies, udon noodles, and tofu.  Hubby will have diced turkey breast with his.

Last night we had roasted veggie flat bread pizzas, which are quickly becoming a household favorite. Tonight we're having burgers and chips.
