We took MIL out to dinner last night for Mother's Day. Had an amazing Italian meal. :) I had bruschetta with proscuitto, pasta with chili, tomatoes, garlic, and pancetta, and the BEST tiramisu I've ever tasted...

Today, FIL is cooking a roast dinner. :)
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

That sounds good what time is dinner lol. ;)  :) we haven't had that in a really long time we might have to go to the store sometime this week an get the ingredients to make that.

Just popped a Lancashire hot pot into the oven.
Boyfriend bought me a cast iron casserole dish this weekend (not Le Creuset, but same idea... lots cheaper, though!) so I thought I'd give it a go.

Spent the day with MiL and she sent us home with spicy tomato and red lentil soup from her freezer.  I added spinach and cut up veggie sausages to it.
Met husband-to-be in Ireland July 2006

Skinless chicken breasts done on the GF grill, steamed rice, & steamed veggies for me.

Scallops, cauliflower puree and a very light keralan style curry sauce to drizzle over.

OR

I have a joint of pork that I should really roast at some point, maybe tonight. If so, that and maybe some cauliflower something, curry even or maybe puree! Or cauliflower cheese, who knows.

I have cauliflowers, if you hadn't realized...and scallops...and pork...and spices. That is all. Not sure how to make them into a meal right now!

No clue we couldn't decide what to have earlier an now its to late to get anything out of the freezer an have it thawed out in time for dinner which is usually around 6:30pm.  ::)  :P

Roast beef, potatoes, carrots, yorkshire pudding, sweet potatoes with brown sugar and pecans, and omgosh the best chocolate cake I've ever made for hubby's birthday tonight :) I really lucked out on this cake! Can't wait for him to get home! hehe

I came on here poking around for easy ideas, and now this is all I'll be able to think about. Sounds divine!!!
