I made roast chicken with an herb butter rub last night and it was so lovely we ate more than I expected!  Tonight is chicken and noodles with the leftover chicken and broth with some of the roasted carrots thrown in.

MIL made turkey stew today. ;D She makes the most amazing turkey stew in the world, and only does it just after the holidays. I ate way too much, and I don't care!
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Roast chicken! YUM! With roast potatoes, an errant parnsip, and some braised red cabbage.

My sister made a gorgeous late lunch of roast chicken as well

We had mexican dip, spanakopita, then roast chicken, roast carrots with maple syrup, rice pilaf, cauliflower puree and rolls

Indian spiced grilled chicken breasts with Tilda vegetable biryani rice and cucumber yoghurt. Hubs will have probably some naan bread with his.

We shoved the chicken carcass in the slow cooker along with the gravy and vegetable remains overnight, so we'll be making risotto with the stock and the bits of meat I picked off the carcass, plus some pumpkin I prepped and cubed the other night.

That sounds really good Andee!  Would you mind PM'ing me the recipe?  The 7 year old announced last night that she wants to become a vegetarian after watching a TV program on chickens.  I told her that is not a problem, as we have been veggie in the past.  I'm going to introduce it gradually-it will give me a chance to use up the meat in the freezer and to see if she will actually start eating beans/legumes. 
Tonight we are having cottage pie.

I am making pulled beef (instead of pork, for a change!) in the crock pot.  Still have some of my homemade BBQ sauce in the freezer too.

Only slight prob - asked DH to pick up a hunk of beef at the butchers on Saturday, enough to fill the crock pot (figuring on leftovers to freeze, etc)...and he got a piece that's about 1/3 the capacity of the crock pot.  And I have one of the smaller crock pots!  :(
