Grilled salmon fillets, boiled Jersey Royals, and purple sprouting broccoli.

We were thinking about going out for a meal...but this weather is so cold & miserable, I couldn't face going out in it again - want to be in for the night, in my jammies.

So we're having jacket potatoes with chili (from the freezer).

Veggie burgers and broccoli in a vegan "cheese" sauce made with butternut squash.

A work mate and I decided to go for a drink after work and then randomly decided to get diner. It was impromptu and lovely. :) Had fried whitebait, steak and fries, and a brownie with ice cream. And too much wine!
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

It's not a bad cheese alternative actually. I found the recipe today whilst googling broccoli and butternut squash (since I had both to use up). Someone had taken the original recipe for mac and cheese and used it for broccoli and cheese.

I am not 100% vegan but I do try and avoid dairy as much as possible. This turned out nice and is much lighter/calorie friendly than a regular cheese sauce so I will def make again. :)
