I made a gorg vegetable curry last night, completely from scratch (ie no spice packet mixes, curry paste from a jar, etc...I even made my own ghee!), using aubergine, carrot, courgette, cauliflower & broccoli... it was so lovely and fresh-tasting!  I made a batch of coconut rice (with extra coconut) to go with it, and it was just fab.  Lots of leftovers for lunch today, and for tea tonight.  :)

Last night we went out for a belated birthday dinner for BIL. Took him to our lovely Thai restaurant. Had chicken satay, yum yum drum (the most amazing chicken wings in the world. You can't get them anywhere else!), seabass with a gorgeous ginger and chili sauce, green curry, pad kee mao, pak choi, and coconut rice. And a pandan pancake filled with coconut for dessert. Yummmmm!

Today I'm feeling rough so I took a sick day. (I didn't drink last night, but major fatigue hit me around 9pm and sleep didn't help.) So, I'm going simple. Pasta with marinara sauce and roasted veggies. There are cocktail sausages for DH if he "needs" meat.

We had a late lunch so we did the soup thing tonight. Hubby had carrot and coriander, and I had tomato basil.

Last night we bought a KILO (!!) of lamb karahi from our favourite southside take-away...  we bought a huge amount intentionally, so that we could have it for 2 meals, so tonight we'll be finishing it off.  I've got a shop-bought naan, and am making some onion rice to go with it.
