We're having leftover chicken pot pie tonight.  I made the gravy stuff from scratch and it turned out to be really tasty, so looking forward to eating it again!

Gammon steaks done on the GF grill, I'm having a baked sweet tater & some steamed veggies, not sure what Dh's sides will be since he doesn't like what I'm having.

Chicken and white bean stuffed peppers

We'll have this tonight, along with some peas and green beans and garlic bread.

I tried my hand at Tom Kha Gai, and it turned out pretty good for a first effort!  ;D I found a Thai "seasoning" packet at Asda, which had fresh birds eye chilis, galangal, lemongrass, shallots and garlic, so it was pretty easy. I just tossed all of that in with some coconut milk, chicken stock, soy sauce (didn't have fish sauce), lemon juice (forgot to buy limes), chicken and mushrooms. DH even liked it and wants to eat the leftovers for lunch tomorrow, so I was pretty surprised! [smiley=2thumbsup.gif]

Sausages with oven chips that I made, peas and carrots. I was pretty proud because I coated the chips with a clove of garlic, some pepper and parsley. DH walked in and said that they looked good-and they actually tasted good! ;D

Oh man... that sounds amazing. Sweet potatoes and coconut are two things I LOVE.  [smiley=smitten.gif] I have made those sesame noodles you recommended and they were delicious!  :D Can you PM me a recipe for the sweet potato curry, or post a link?

DH bought me a loaf pan a few weeks ago, but when it arrived, it was half the size of the regular ones. But that's okay, as I'm going to make a mini-meatloaf for the two of us, along with some steamed baby potatoes, sweetcorn and peas.
