I tried my hand at Tom Kha Gai, and it turned out pretty good for a first effort!

I found a Thai "seasoning" packet at Asda, which had fresh birds eye chilis, galangal, lemongrass, shallots and garlic, so it was pretty easy. I just tossed all of that in with some coconut milk, chicken stock, soy sauce (didn't have fish sauce), lemon juice (forgot to buy limes), chicken and mushrooms. DH even liked it and wants to eat the leftovers for lunch tomorrow, so I was pretty surprised!
