Easy peasy something creamy
Cut everything into ribbons, fry the onion gently in olive oil, add some garlic if you have it, throw in the leeks and saute to soften then the cabbage.
Add chicken stock to cover the cabbage or if you have it some white wine and simmer until everything is softened and reduced by half. Then add the something creamy - things you can use Cream Cheese, Creme Fraiche, Double Cream etc. Also add a teaspoon of mustard (dijon is good).
You can then put it in an oven dish and put breadcrumbs and cheese on top and bake it. Or if you add bacon/chicken/ham/whatever it makes good pie filling. Just make a quick pate brisee from butter/flour
Made this tonight, and it went over really well, so thank you! The only problem is, it went over so well, there's nothing left; I was hoping for leftovers for at least tomorrow night.

Oh, well, I'll do it again, or figure out something else.

That's OK! You'll get much better at it! Stick at it!!
I personally couldn't go to the shops just once a week, as I'd actually waste more food as things go 'off' etc. I find it much better to go several times a week and use up what I have before going in.
But the important thing to do is when you do go to shops is to plan and stick to your plan, even for a small shop. So say your budget for the week is £30. I'd use £10 on Sunday for meals plus any essentials (bread, milk, etc), £5 on Tuesday, £5 on Thursday, £10 on Friday (for the wine
)
That's just me though!
Here's a few websites that will help come with things for ingredients you have on hand as well:

Good luck, I love cooking!
Yeah, I'd like to get to a point where we can shop throughout the week, but we have a bit of a handicap in that the place we moved to a couple of months ago doesn't really have any good shops close by. Neither of us drive, and we don't want to pay bus fare (almost £4 a pop) to go, so we have ASDA deliver for the regular stuff. And to avoid paying a lot in delivery fees, we try to keep it to once a week. There's a Co-op in walking distance, but we've found their prices tend to be way too high for anything other than grocery emergencies.

Plus, I do want us to get into better buying habits; we were really bad about buying stuff for one meal, then not really finding any other use for it. Doing stuff once a week has made us look at things in advance and plan a little better (except this week, obviously!).
Thanks for the sites; I was meaning to try to find something along those lines, since normal recipe sites always had something our cupboard was lacking. I'll definitely be putting those to good use!
