We grilled up some burgers and kielbasa, served up on some homemade bread. ;D I sauteed some peppers and onions for the kielbasa, and made some sweet/spicy baked beans, and a salad.

Pear and quinoa salad with melon for dessert. It's fun to make hot weather food finally!

I made my mom's potato salad, threw some rib eyes on the BBQ, and grilled some nice big mushrooms. Nice Cabernet with it....and we spent a nice few hours in the back garden.

Hmmm....Maybe something with shrimp? Or maybe I'll not have any meat at all? I keep reading that one day should be "meat-less" (Which is super hard for me because I LOVE chicken, turkey, beef, etc.) and Mondays would be the best day to stay vegetarian for me... ???

Most days would be meatless for me, if not for DH! ;) I used to eat meat a total of 2-3 times per week (including all meals) when I lived alone. He knows that I'll cook it if he gets it out and defrosts it, but otherwise, I'm happy with veggie meals.

Last night was another BBQ, this time at BIL's house. :) Today, we're going to eat some leftover pasta and salad, and I'm going to make chicken and gnocchi soup - Olive Garden inspired - to go with it.

I have a hard time with the no meat thing! I LOVE it and crave it all the time! What makes me bad though is that if I'm not having meat, I crave carbs! (Pasta mostly!) so I have to sit there and convince myself of eating the "lesser evil" LOL! But most of my day today has only been fruits and veggies! (Breakfast fruit shake with spinach in it, Lunch was a mixed veggie salad). So by dinner, I'm wanting a bit heavier... :P

Amberelle, I absolutely love to eat veggie, I highly recommend you get a good vegetarian cookbook -
Two that I can recommend are Vegetarian Cooking for Everyone  and the River Cottage Veg Everyday

The trick is (if you miss meat) to not cook things that seem like they need meat - bean stews, veggie soups and broths, chillies, curries, pizza, omlettes, bean burritos, veggie wraps, etc
It's really fun to experiment.  Sure it can be a bit 'carb' heavy, but there's nothing wrong with carbs at all! You should aim to eat better carbs (wholemeal, brown rice, barley, spelt, kasha, etc) but carbs fuel the brain and our bodies  :)

Honestly, that doesn't sound like enough food for breakfast and lunch.  Is there any protein in your shake? Yogurt?  Peanut butter?  And I'd add chickpeas or something like that to the salad.  Not enough protein going on to sustain you until dinner.

But then what's left?  :D  I don't miss meat, but I still like to add veggie sausages, veggie mince, and veggie chicken pieces to all of the above just for a change of texture and to bulk stuff up a bit.

Yeah, I agree that doesn't seem like enough food or protein in a day.
Hehehe yeah, meat subsitutes can be great for someone who wants meat but doesn't want to eat meat (or in your case as a veggie, to add protein and bulk out!  :)) - so check that stuff out amberelle as well -quorn, linda mccartney, tesco does some good frozen stuff,  (amongst other brands, health food shops, etc!!!)

Ohh trust me! It's enough! I'm not starving at all! it's the cravings really! My morning shakes do have a lot in them! (Mixed berries and a banana, skimmed milk and yogurt and protein powder and spinach (Sorry! Forgot to mention it!) and they are really thick shakes in a big 8oz glass. My salad's are probably about 4 cups as well! LOL! (my biggest meal each day is always lunch, it stops me from the bad night snacking.) I.E. today with the mixed greens I also had tomatoes, celery, feta cheese and stuffed green olives and ranch dressing. I also take healthy snacks with me (I try for 2 snacks a day, but to be honest, I'm not hungry in the mornings at all! So it's usually a 3pm snack which is like a handful of Almonds, or lunch meat and cheese, or cottage cheese, a piece of fruit, etc.) I just think by dinner time I'm so over the "eating healthy stuff" that I'm like, "Lets have a really unhealthy meal of pizza or pasta!" (The last thing in the world I want is MORE veggies! LOL!) If I pull out chicken or turkey or salmon, then I tend to avoid making such a bad dinner decision for myself and it's something other than fruit and veggies...which I get sick of really quick! It's really easy for me to go the "easy way" with dinner because Monday-Thursday night it's just me at home alone...I never want to do a bunch of cooking for just myself, so throwing a piece of meat in the oven and steaming some veg always seems like an easy option and it stays healthy. I just need to stop being a baby and realize I'm only sacrificing ONE Day! LOL!

OK, now that you've explained it better it sounds much more healthy and substantial!
