Tonight was ribeye steaks (adli have a lovely one) on the BBQ, burger for the chicklet who wont do steaks, sauteed mushrooms and onions, and twice baked potatoes. It was very yummy!!!

01/30/2012-Biometrics for UK spousal & dependent visas sent out w/ application same day
02/03/2012-Email from UK Consul General application needs further processing will receive decision within 10 working days.
02/09/2012-Request for more payslips and custody papers for daughter.
02/22/2012-Submit the requested documents with prayers.
02/24/2012-UK settlement visas issued :)
03/12/2012-Arrive in MAN UK :)

...since I have received celery for 3 weeks straight in my veg box. I can't seem to use it fast enough.

I don't know if this has been mentioned, but I wash & scrape (if necessary) & chop up celery, throw it in a freezer bag & freeze it.  Then if I need some chopped for a soup, stew, making stock or whatever (something that is going to be cooked & needs celery as a base note) - I have it at the ready. It's mostly water anyway so it freezes well for this purpose, for cooking - of course you wouldn't eat it raw after having frozen it.  I do the same when we get lots of leeks occasionally that we can't keep up with.

Chicken fajitas with homemade guacamole and Spanish rice. Probably pretty simple for most people, but a big (and tasty) accomplishment; that stuff used to comes out of a package for me!

Had a restaurant booked for tonight through a living social voucher. Given the events of the day, I wasn't sure if we would be going, but it turned out to be a celebration dinner...

Went to the Docklands Bar and Grill, which was walking distance for us. Had macaroni and cheese as a starter, and fish and chips for the main. DH had lobster and crayfish linguine to start, and a burger and chips for the main. Plus white wine! Really simple food, but great quality. :)
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Thank you! I was really pleased with myself.

Last month, I bought one of those windowsill garden kits, and the coriander (I was so excited to learn that was cilantro!) was mature enough to cut some off, so I put it into the meal last night. It was the freshest, nicest I've ever had. It made everything taste as good as any Mexican restaurant's meal. :)

Tonight, I'm not sure. Thinking of grilling some pork chops. Maybe some roasted potatoes and carrots, and some creamed spinach. Or something....

BLTs and I think I'll make some macaroni salad to go with it. My husband is never excited about sandwiches for dinner, so I need to make something else to go with them to kick them up!

So, tonight I made a really gorgeous creamed spinach with mushrooms. Then my husband and I learned at the same time he doesn't like cooked spinach. Pity, 'cause I definitely want to make that again. Oh, well, live and learn.  :-)
