We're having easy-peasy homemade Tex-Mex burritos (spiced beef mince, whole beans--I'm not crazy about refried, and all the fixin's).  Beer for DH & some white wine for me.  :)

I was dying for spaghetti and meatballs. So I did up a bunch of meatballs this morning and they have been simmering in sauce all day in the slow cooker. Pop some freshly grated parmesean on top. Salad on the side and some fresh garlic bread.

02/03/2012-Email from UK Consul General application needs further processing will receive decision within 10 working days.
02/09/2012-Request for more payslips and custody papers for daughter.
02/22/2012-Submit the requested documents with prayers.
02/24/2012-UK settlement visas issued :)
03/12/2012-Arrive in MAN UK :)

I've got a Pinterest Chicken Ranch Taco thingy in the slow cooker which I'll serve with homemade salsa and guacamole.  I'm all about Pinterest lately!

Cooking for the past few days has been me sitting in a chair at the stove seasoning and stirring, i.e. the fun stuff, while DH does the boring prep stuff and running back and forth to the fridge/cupboards. :) I could get used to this...

Last night we made a lasagna-ish dish. I just wanted a pasta bake, but we only had spaghetti, angel hair, and lasagna sheets! Rather than make a bechamel or ricotta filling I just did layers of good quality cheddar and romano cheeses... It was really tasty for being so easy!

Tonight is chicken pot pie. But I had less pastry leftover than I thought!  :-X So we're having it over rice.
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Me too! I tried that honey garlic chicken thingy we both pinned the other day and it really was nice! I'd make a few adjustments next time, but fried chicken is never a bad thing. ;)

I think I'm going to pop some teriyaki chicken thighs in the slow cooker later and make some egg fried rice to go with it. Maybe some sesame green beans, too.

We finally have internet at the new house! Had a rough day with my body yesterday and I'm still recovering from it today, so I've made some lemon garlic chicken in the slow cooker and I'm planning to cook a bit of rice and green beans to go along with it. I also want a salad (grown in our windowsill!) but I don't know if my tummy can handle it yet.

Today I did plant the spring/green onions I bought two weeks ago at Morrisons and have kept in the windowsill since. They are the first plants in our back garden and I hope they do well. Now that I have a freezer bigger than my fist, I can actually make up meals to freeze now as well as freeze some extra produce from the garden I'm hoping to have next year.  :)

Forgot to pull any meat out of the freezer, and hate defrosting quickly as it dries meant out so badly. So I'm making a make-do Salade Niçoise. I don't have any tuna steaks, so canned tuna will have to step up. :P

A baked potato with butter, sour cream, chedder cheese and mushrooms! YUMM!!! I may add a salad or some sort of veg with it...But keeping it nice and simple this evening!

Thai green chicken curry that was cooked in the slow cooker. Since everything was frozen except that mushrooms there is a fair bit of liquid. Hopefully nothing that serving over rice won't fix. If nothing else I'll just tell my husband that it is Thai green chicken curry soup!  ;)

I made a huge pot of ham and beans and a big batch of corn bread this weekend.  We're all about beaned out after eating leftovers for the last three days.  The rest is going in the freezer and I'm going to make a cheesy potato and ham casserole for tea tonight. Sounds good already, I'm starving!

Last night was my birthday dinner at Thai Thai. We had Yum Yum Drum (spicy/sweet chicken wings), Southern Thai Chicken, Pad Thai, Pineapple Fried Rice, and Mixed Vegetables. And DH got me the most AMAZING fresh cream and fruit cake. It was my version of heaven. ;D

Tonight we're having leftover pad thai and fried rice (plus other random leftovers from the week) and I've got some soy/balsamic veggies on the go in the slow cooker.
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!
