02/09/2012-Request for more payslips and custody papers for daughter.
02/22/2012-Submit the requested documents with prayers.
02/24/2012-UK settlement visas issued :)
03/12/2012-Arrive in MAN UK :)

Grilled chicken, rosemary onion gravy, potato pancakes, apple sauce, plus some veg from the garden -a mixture of courgettes/cauliflower/swiss chard

I think I'm going to pop some teriyaki chicken thighs in the slow cooker later and make some egg fried rice to go with it. Maybe some sesame green beans, too.

We had this last night. The night before, I made fried chicken (again, lol, chicken tenders this time) with homemade fried okra... the BEST! Man, I really missed okra. It's so awesome that Morrison's has it right now. I may have to follow someone else's suggestion and go buy it all up and chop it up and freeze it so I have some when we get back from Texas.  [smiley=cowboy.gif] I wonder if I could coat it first, then freeze it? So all I had to do was throw it in the chip pan? It would probably all stick together, though, and it would be hard to flash freeze it since our freezer is pretty small.

Ok, I'll stop ruminating about okra now. I think I will make a cheesy chicken and broccoli cottage pie tonight.  :P

Ohh fried okra. Yum!

I made a beef curry in the slowcooker yesterday, then made some sweet and sour curried pumpkin and karhai broccoli

jewlz, my mom freezes okra in the US and coats it first in the cornmeal mixture.  then freezes on a baking sheet and pops it in ziplocs for longer term storage.

We went out for authentic Mexican with Mrs. Robinson and her hubby and mapleleafgirl and her hubby.  It was very yummy!

For tonight I've already made a very veggie tomato sauce with chick peas, which can be used as a base for minestrone or kept as a pasta sauce (it's really thick at the moment, like chili).  Hubby will have his with chicken and I'll have mine with a bit of pasta and veggie sausages.

Last night was homemade chicken and mushroom pie with a yummy herbed puff pastry crust and tonight will be a regular chicken pot pie with carrots, peas and a slightly different herbed crust. Lovely warm comfort food perfect for the bit of chilly weekend we're having.

Found a big courgette hiding amongst the leaves -
So I hollowed it, stuffed it with a sauce made with the courgette,tomatoes, onions, peppers, garlic, and basil -  then topped it with mozzarella cheese and broiled it

Plus some garlic rosemary roast potatoes and some purple broccoli from the garden as well

Some white wine!

Stuffed!!

The boy is going on Atkins on Monday and I am fairly low carb anyway but could do with dropping my last 20lbs to goal weight so am joining him, so I had a low carb texas chilli and some grated cheese.

Looking forward to next week, lots of healthy veggies and nice meat next week (and induction flu, yay) :D

Oh Courtney, where did you get a spaghetti squash?
That's one of my favourite veggies!!!!   I lovingly grew about 8 spaghetti squash seedlings and hardened 'em off.  Then planted them under fleece.  And yet this horrible, wet summer killed them off.   :\\\'( :\\\'( 
I can't find anywhere that sells 'em either........
