I made buffalo chicken dip and ate it with cucumber slices as I couldn't be bothered to cook much :) Was good! :)

I made chicken enchiladas, rice, and sweetcorn yesterday. Haven't had it in ages, so it was amazing... Leftovers for lunch today, too. ;D

Mac and cheese with tuna, broccoli, green peas and possibly carrots. If I can get the energy to make the French bread and pizza dough for the freezer that I'd like to make today, I may surprise the husband and have pizza instead though.  ;)

I followed this loosely. I used passatta, left out the egg and the sugar and added sauerkraut as that's what my grandma used in hers. Also used quorn instead of meat.

Made some soup using some chicken stock I made this weekend, with cabbage, carrots, celery, and onion, plus some roasted acorn squash with butter and brown sugar and some homemade bread. :)
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Made some stock this weekend as well...But was REALLY craving homemade Chicken Noodle Soup! So that's tonight's comfort eating!  :)

DH made a pasta bake and I had some leftover squash on the side. Also had quite a bit of vodka and baileys to wash away my mood!

We will be having mushroom bisque with homemade bread tonight.

We don't typically use the stems when we are cooking mushrooms, so I've just been throwing them into a container in the freezer. I finally saved a half pound of them, so I thawed them and used them instead of fresh mushrooms. Keeps us from wasting food. Ran it through the blender so that all I'll need to do tonight is bring it back to a boil to finish thickening, then add 1/2 cup yoghurt. I'll also need to warm/crisp the bread. I'm fighting a nasty cold, so soup is very good at the moment.

Peppered Steaks, Baked Potatoes (nice, giant fluffy ones from the garden, mmm), Garlic Onions and Mushrooms, and Brussels Sprouts

Felt better today so I made chicken stock from a leftover chicken carcass that we had. Used about half of the stock in a made up veggie soup. It had tomatoes, red kidney beans, cabbage, shallot, mushrooms, carrots, mild chilli powder, cumin, smoked paprika, black pepper and just enough salt. It was very good! We each ended up having two bowlfuls and we crumbled some homemade bread into it as well. Just the right amount of heat.  :)
