I have some bits of chicken that need to be used up today, so I'm thinking about making a gluten free chicken pot pie. My husband and I both love it, I can chuck in as many veggies as the baking dish can hold and it's wonderful and warm.

Then I can make chicken stock overnight for tomorrow!

We went to Steak Club at Wetherspoons last night.  I was expecting it to be average-ish, as most of Wetherspoons other food is, but this steak was really, really good!  It was exactly as I would have cooked it if I'd cooked it myself, apart from the fact that I add a bit of garlic to the seasoning.  The onion rings were delicious and seemed freshly-cooked, not something out of the freezer.  The chips were only average... probably frozen, and the peas were dry and terrible, but... the STEAK was good and we will definitely go back sometime.  Good price, too.

Think we will have fish pie tonight.

Currently plotting Top Secret Menu for tomorrow night - for DH's birthday dinner.  Off to do my shopping for it now.  (I can't put it up here until after the fact, in case he does any 'Guest' snooping, which he sometimes does on 'What's for tea?')  ;) :D

The Top Secret info can now be revealed - I literally slaved away ALL day yesterday for this!  Exhausted today, but we had...

Lemon poppyseed cake (baked in a ring mold) for his birthday cake

And since a lot of times we are travelling for his birthday & we like going to Spain a lot, I really surprised him with a Tapas Night (this is the sort of thing he might cook for me, but I never have attempted it before!).

Roasted almonds tossed with finely ground sea salt, Spanish paprika (pimentón) & a little olive oil
Marinated olives
Manchego
Pan flash-fried chorizo bites sizzled/sousled with Tio Pepe sherry at the finish
Catalan-style roasted vegetable salad (this took freaking forever to make!  like 2+ hours)
Spanish/Moorish style cubed pork kebabs

All tossed back with a little fino (dry pale sherry - Tio Pepe), then a taste of some 30-year-old Amontillado (Gonzales Byass) that I got him for his birthday, and finally some red wine.

He was appropriately blown away by it all & indeed I have to say it all turned out well - almost as nice as being in Spain, but for the weather.  :P

Thanks ladies!  It was a big birthday success & he loved it, so it was worth it.  Today I felt completely wrecked, however - two days' of planning & cooking, plus the booze, I went back to bed for a little while today at noon!  :-[

I *think* I've convinced him to make pizza tonight, so I can continue putting my feet up.  :D

(If I'd been really brave, I might have chanced a seafood dish - calamari, etc...but I don't think it would have turned out nearly as well.)

Lots of nice meals this week!

Convinced DH to make pizza for Wednesday - yay!

I made creamy penne with bacon lardons, chicken breast pieces, garlic, leeks, mushrooms & peas last night.

Tonight, I'm making lasagna - mmmmm.  :)

Lasagne is always a hit! :)

I have a big bag of rainbow chard in my fridge so I'm going to do a casserole from a recipe I found on Epicurious but tweaking it by lining the bottom of the pan with potato rosti.

R said he was craving something "warm and comforting" so hopefully this hits the spot.

Couldn't possibly feel less like cooking tonight, which is weird as I love to cook, so its Chinese take away  ;D

02/03/2012-Email from UK Consul General application needs further processing will receive decision within 10 working days.
02/09/2012-Request for more payslips and custody papers for daughter.
02/22/2012-Submit the requested documents with prayers.
02/24/2012-UK settlement visas issued :)
03/12/2012-Arrive in MAN UK :)

We ended up having stuff from the chippy last night, but I'm going to try for a pork stir fry with mushroom bisque. If we are still hungry after that, I still have some of the hibachi restaurant style broth soup left.

We made homemade pizza last night. I finally managed to make it taste just like my dad's! It was wonderful.

Tonight I think we're having sausages with sauerkraut, mashed potatoes, and steamed cabbage.
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!
