Last night I made pasta with a tomato and basil sauce and roasted squash with butter and brown sugar. Awesome... Tonight it was chicken fajita and mexican rice! :)

Spicy Butternut Squash Soup

I'm sure some of you expert cook already knew this, but I never knew you could cook a whole, unpeeled squash in the crockpot until this morning! I stumbled across the idea on google and decided to try it. Poked a few holes in the skin, put them in on low and came home to squash I could cut in half with a butterknife! So easy to peel and deseed! Granted it would not be good for a recipe that called for cubes of squash but I'm going to try it on a weekend when I can be home to take them out at a firmer stage. Yay for new time saving ideas.  :D

Homemade boston baked (pinto) beans, although using pork belly not salt pork for the flavouring.

I made pierogies sauteed with lots of onion and butter, sauerkraut, and roasted carrots last night. Tonight, not a clue yet!

Oooh! Great stuff Courtney! I can't wait to try! Thanks!

I made a spicy bean and barley casserole last night, plus some broccoli. I was freezing and wanting something warming.
