PB's recipe will probably be different than mine. (I've 'trademarked' the very veggie chili title  :D )

I can give you my recipe in a bit.....

Heheheheh!   I need to pay you some royalties  ;D

'Fraid I don't have much of a recipe PP, I just today tossed about odds and sods from the fridge for veggies (peppers, onions, courgettes, green beans, carrots, broccoli, some cabbage), garlic, a chipotle pepper, 5 bean salad tins- easy peasy, tomatoes, chili powder, liquid smoke, paprika, olives - probably not authentic, but tastes yummy!

My very veggie chili also consists of whatever veg is in the fridge, roasted then added to some a combination of beans (I like to mix black, kidney, pinto and white but any 2 will do) and tomatoes. I love to add corn for colour and finely chopped celery adds a really nice depth. Add cumin, chili powder, smoked paprika, a touch of cinnamon.... whatever you feel like. Have fun with it! :)

Tonight we are having roasted veg over pasta.

My very veggie chilli is similar to Pb's and Courtney's.  I don't roast the veggies but that would make it even tastier!  I always start with frying chopped onion up in a bit of oil and add whatever veggies I have--usually celery, green beans, carrots, peppers and mushrooms. Anything can go in--I've used broccolli and cabbage (chopped up really small) as well--whatever needs using up.

Then cumin, cinnamon, chili powder (or fresh chilis), salt, sometimes paprika, a bit of dark chocolate if I have any.  A couple tins of tomatoes, whatever beans I've got.

Hubby usually un-veggies his by cooking up some diced turkey or chicken to add to his.  I sometimes add chopped up veggie sausages or veggie chicken pieces to mine.

It's really easy to make!
