Hubs is making a chicken pineapple habanero curry. I was going to do a chicken pineapple jalapeno curry, but now I am thinking about going in a different direction and doing something with bell peppers, onion, carrot and mushroom. Quite possibly a stir fry.

Sounds good! I have found leeks in two shops in town, both wanting insane amounts of money for them. We have a row of them in the garden at mom's and she has been taking care of them for us since we moved. They should be ready in the next few weeks. I can't wait!

We had stir fry. Both of us had green pepper, carrot, broccoli, onion and mushroom. Hubby had prawns and I had zucchini and eggplant instead. I have to do his and hers, any time I do veg dishes because he likes his just shy of baby food it is so mushy and I like mine still firm but not crunchy.

Yeah, leeks are crazy expensive here. I think those were 2 for $3 or something like that. We definitely don't eat leeks as much here as we did in Ireland. On the plus side, Trader Joe's has frozen leeks, so I will sometimes use them for soup or pies.

Takeaway pizza.....was gonna save the money, but with all the pots and pans packed and taking the cat to the airport.....im gonna treat myself :)

Stir fried pork with aubergine, red peppers and basil.

Pretty much a budget meal - the pork and aubergine were both reduced at the weekend because they were close to sell by date, and the basil we already have in a pot on the kitchen windowsill.

Fried Papas and Beans!

Yes, Spanglish at it's finest in this traditional family meal name, lol. I once had a teenager say 'that's papas fritas', and I said 'NOT IN MY FAMILY!' My Dad was raised by his Mexican Grandmother.

 I made homemade fresh salsa from mine and my stepdaddy's gardens to go with. Excited!
4 December 2005--Met in ATL, Moved in together
July 2006--First visit to the UK, met his Mum
Feb 2007--Eloped and told everyone we were engaged ;)
May 2007--Wedding, Part 1 in Pine Mountain, GA;
Sept 2007--Wedding, Part 2 in Scarborough, UK
Nov ‘08–1st Child
May ‘10–2nd Child
June 2013--Decided to move to the UK!
July 2013-Jan 2016–family tragedies. Delayed move
April ‘15–3rd Child
2019...planning again
January 2022–applying for visa!
Goal: Get Eldest in UK school by year 9!
Hopefully moving to Malvern June 2022
