There is a pork roast with potatoes, mushrooms, onion, carrots, green beans and corn in the oven. I thought about beef stew because of the crazy cold temps, but the pork was a better deal and just sounded good.

I found a spaghetti squash yesterday and I was so excited! It is my favourite vegetable and I haven't had any luck growing them!

I made spaghetti squash tossed with a sausage tomato sauce and baked with ricotta and mozzarella cheese. Heaven!
I've never gotten food on my underpants!

We were going to go for Amish food with a friend, but plans changed, so we had some KFC. I miss a LOT of things about life in the UK, but it is nice to be back in the land of KFC with mashed potatoes!  [smiley=2thumbsup.gif]

The other day I was craving tofu, so I made a veggie and tofu chow mein - I made loads, so I get to have the leftovers for tonight.  I love leftovers, you get a yummy yummy meal and don't have to do any work!

Potato soup. Tis a bit cold and snowy out, which always makes me crave soup. I also have curried pumpkin, parsnip and carrot soup on the go for tomorrow.

We had crappy supermarket pizzas, but I also made a big pot of my 'famous' (well, some of you have tried it and loved it) green (or white) chilli  (chicken, white beans, and green chilli).  Saving that for tomorrow to take along,when we are going to visit a friend that's probably in the last few months of his life, due to pancreatic cancer that's now spread to his lungs.  Hope he will love it!

After simmering pumpkin, parsnip and carrot soup most of the day, we ended up making a run to Evansville, 48 miles away, because I had to get new glasses. While we were there we went to Teppanyaki for all you can eat Japanese, Chinese and Americanese food.
