Spaghetti squash and roasted chickpea curry, based on this recipe:

What Courtney said - but jealous of Courtney, with takeaway.

Enchiladas here.

Lol! I have a big paper to finish this weekend so I have no time to cook. Tonight it's a baked aubergine ready meal.  :-\\\\

Having my haggis on Wednesday night, so have opted for something else. Craving comfort food. Making roast beast, Yorkshire puddings, roasted veg (potatoes, celeriac, carrots, leeks), red cabbage and onion gravy

Hahah J just pointed out we are having a particularly English meal on this very Scottish of nights, but it just sounded yummy to me. Besides, we did get haggis and pork sausages today, so we aren't completely amiss  ;)

Minestrone soup. It is currently 11f with a windchill of -6f, and it just felt like a soup night.

Last night I made beef fajitas (out of leftover roast beast) and spicy beans

Tonight it's our (slightly delayed) Burn's Night Party!  We're all bringing something along to the fun and I have been randomly assigned to bring the pudding- cranachan.  :)

Bring on the *bleep*-a-leekie soup, haggis, 'neeps, tatties, oatcakes, cranachan, and whisky!  ;) [smiley=2thumbsup.gif]

Hubby had chips and egg. I had chips and a tuna melt, with hot pepper cheese.

I got some lovely tilapia from Whole Foods and baked it along with fresh veggies. It was a hit at the house :) Not to mention very healthy!
