Veggie lasagna with carrots. mushrooms, courgette, aubergine, onion, and bell pepper (red, yellow and orange).

With enough left over for tomorrow night.  [smiley=2thumbsup.gif] All the yummy without the work.  ;D

We went to a local restaurant we've been meaning to try and I had shrimp with grits. It was amazing. Tonight we're having cabbage rolls with mashed potatoes and green beans. My in laws are here, so it's a lot of meat and potatoes for the next few weeks.  :P

If I can scrape my fat ass off the couch, I am making chicken Spring Rolls, and also doing Chili and Pasta sauce for later in the week, as well as scones for my daughter's birthday breakfast.
If I can get my lazy butt of the couch...

Last night made slow cooked jerk pork, roasted Caribbean spiced sweet potatoes, and a mango and avacado salsa.  And yay for leftovers for lunch  ;)

Tonight, it's curry! Going to a co-workers house where several folks have made some authentic curries (i.e. their Mum's recipes from the various parts of India where they grew up)  for us to indulge in  :)

tonight we are having fried chicken, waffles, clotted cream and blackberries...all covered in maple syrup. Yummy!

I know the british don't have the most adventurous tastes but I definitely love southern food.
Like the time my wife made yams covered in marshmallows for thanksgiving a few years back:
instead of "Wow! this is amazing darling" i believe i said...."We've been married for 3 years why the 'heck' haven't i had this before?! This is the best thing ever!!"

-so glad I married a southerner!!  ;D (and an understanding one at that!)

Herb crusted, thick cut pork chops, baked with carrots, celery, mushrooms and onion.

This is a staple for thanksgiving for us- a tradition from my Charleston born and bred mother, they tend to be a big hit with Brit family members - although my southern mother would NEVER refer to them as yams- definitely only sweet potatoes allowed :)

Last night I made a massive pot of veg & lentil soup. It came to 4.5 kilos. ;D

Plenty of carrots, parsnips, celery, potatoes and tomatoes. Yum! Since it thickens up overnight, we usually eat it differently after the first meal (adding milk so it's soupy or leaving it thick and putting it over rice) so we've got plenty of meals ready. 8) I might try freezing some for nights when I can't be bothered to make dinner. ;)

Poached cod with parsley sauce, minty peas and broad beans and roasted cherry tomatoes to finish. Perfect summer meal!

A little bit of everything. We went to Golden Corral with a friend, had a great time and we all three came away miserably, happily overstuffed. I'm talking Thanksgiving stuffed.

Cottage pie with an INSANE amount of mash on top. Last night it was chicken stew. Tomorrow we will finish off the stew and Tuesday we will finish off the pie. I have been in need of comfort food the last few days (can't really pinpoint a reason for it), so despite temps near 90 we have been having hot comfort food.
