Mini chicken pot pies
2001 - moved to the UK on a student visa
2002 - 2 year work visa (and met hubby later that year)
2004 - moved w UKC hubby to US
2012 - UKC hubby now a dual national (USC)
Apr 2015 - moved back to UK w DH and two DD

Looking forward to veggie chow mein tonight, had amazing Teriyaki-grilled salmon yesterday over onions grilled with soy sauce and sugar, white rice and veg covered in a sesame soy lime dressing (with chili, garlic and ginger)! I'm slightly obsessed with it now.

This has been tricky since my little daughter has been taken off Dairy, Gluten, Beef, Turkey, Chicken, and Eggs, but really looking forward to Pork Chops over rice and beans tonight ;)

Feb 2007--Eloped and told everyone we were engaged ;)
May 2007--Wedding, Part 1 in Pine Mountain, GA;
Sept 2007--Wedding, Part 2 in Scarborough, UK
Nov ‘08–1st Child
May ‘10–2nd Child
June 2013--Decided to move to the UK!
July 2013-Jan 2016–family tragedies. Delayed move
April ‘15–3rd Child
2019...planning again
January 2022–applying for visa!
Goal: Get Eldest in UK school by year 9!
Hopefully moving to Malvern June 2022

Score! We didn't have the pork chops because we got home too late, but I had to cook them today.  While out, we found, at Costco, a gluten/mustard/animal product-free teryaki sesame marinade, so I stuck them in the crock pot with that and some mustard-free ketchup. Tomorrow's lunch is gonna be awesome.

Thick cut pork chops cubed and simmered in Nando's hot sauce for hubby, cubed boneless chicken breast simmered in the same sauce for me, mashed potatoes and some sort of veg to be decided later.

I keep forgetting to post when we have good stuff. Tonight Papa John is doing the cooking. We've both been working a lot of extra hours, and it was either order pizza or have cereal. Those were the two options I have the energy for tonight.

Dinner's been great so far this week- chicken enchiladas and Mexican-inspired salad yesterday, and today, chicken risotto with peas, broccoli and asparagus.

I've been so busy lately that I've not had much cooking mojo. However, this week, I've had far less on plate and I've been cooking up a storm!
Wednesday night made Tortiglioni with a cheesy, pumpkin, bacon, kale and sage sauce
Yesterday, made slow braised beef and (home-brewed) beer stew with all kinds all of root veg from the allotment
Tonight is spanish tilapia with tomatoes, peppers, and onions from the allotment (and olives, lemon, herbs, etc) with (allotment grown) broccoli with lemon-garlic  and steamed potatoes  
I've never gotten food on my underpants!
