Tonight we are making a veggie lasagna. I can't wait.

Baked chicken, mash, corn, carrots and gravy, with some crusty bread simply because we need to use the bread.

Last night I made salisbury steaks, root veg mash and kale.

Today, I've got a gammon  with sweet potatoes and apples and spices in the slow cooker.  I will add some kale or cabbage, never ending kale and cabbage in my house these days due to allotment glut....

Very Veggie Chilli sounds yummy, perhaps you can pass the recipe on to us UKY-ers? :)

We finished off the chili from Saturday night. I love when it has time to blend properly.

I probably did share the recipe once a long time ago.  It's a little different every time depending on what veggies I've got.  It always starts with chopped onions and mushrooms sauteeing in oil (get the mushrooms browned).

I add fresh chilies (I don't like things super hot, so I don't use loads) and usually equal parts of cumin and paprika, some cinnamon, salt, and then loads of chopped veggies, usually carrots, peppers, courgette, green beans.  You can use anything  you've got, even aubergine and broccoli, anything really.

Let the veggies get tender.  At some point before veggies fully cooked add tinned tomatoes (I like it quite tomato-y) and keep simmering and cooking down the liquid until it thickens up.

Add whatever kind of beans you like and however many you want.  I usually have my chilli more veggies and less beans, but whatever your preference.

I've got the day off, so spent the afternoon making rye bread and veg lentil soup. Just waiting for DH to get home... it smells soooooo good. :) Perfect for a cold day.

I was intending some sort of soup since it is cool and rainy out, but hubby was craving our fave Italian place in town, so we are waiting for the delivery guy.  ;D

Hubs is having jumbo spinach and ricotta ravioli in Alfredo, I am having jumbo shells in Alfredo, we are both having salads and bread, and mozzarella sticks for the appetizer.

Ahhh  LittleMissSarcasm, Andee's Very Veggie Chilli is famous!!!  ;) :D ;D

Using up odds and sods in my cupboards, as I have 1/3 packets of this or that starting to take over - so last night I made vegan cabbage rolls last night - made with spelt and red lentils

OMG this looks fab!  Did it turn out alright?

It sounds waaaaay nicer than the takeaway pizza we're having here tonight.

Mmm. Roasted chicken crown, pan fried broccoli, mashed potatoes and Yorkshire puddings. Best dinner we've had in awhile.

And chocolate mousse for dessert. (Tesco made that for us, sooo good)
The usual. American girl meets British guy. They fall into like, then into love. Then there was the big decision. The American traveled across the pond to join the Brit. And life was never the same again.

Beef stew and dumplings. Hubs loves it with dumplings, and I used to think it was odd, but it is quite tasty.
