Beef stew and dumplings. Hubs loves it with dumplings, and I used to think it was odd, but it is quite tasty.
I'm veggie, but that doesn't sound weird to me at all.  The dumplings could take the place of potatoes in the stew.  Sounds good actually, could do a veggie version with seitan and lots of mushrooms to get the gravy...

Tonight was the first time I cooked for the workers here at the place I'm now living in Ireland.  I was worried for a few reasons:  different stove--this one is an industrial sized one, different pots, similar, yet different ingredients, cooking for more people than I've done before.

I did a curry with urid beans that needed using (like mung beans, but darker and took longer to cook) and veggies that there was a lot of from the garden:  carrots, squash, broccoli greens a turnip, tomatoes and then chillies, onions and celery.  Lots of spices and fresh ginger as well, everyone said it was really good!

We do veggie meals quite often, for being carnivores. I will have to give that idea a try. I suppose the reason it first seemed odd to me was because I've always had chicken and dumplings, so it seemed different.

Creole chicken and veggies that simmered in the crock pot all day. We were a bit disappointed because the Creole seasoning was a bit salty. Other than that it was really good.

J made a gorgeous pumpkin risotto last night.   I suffering from a major hangover yesterday and it was exactly what I needed. Creamy, comforting, tasty!  

Tonight it's got to be something with courgettes. I'm still! getting them from the allotment and I have 4 decent sized ones that need using...   I've also got yellow, black, and red tomatoes of all sizes that need using.  Hmmm....  
I've never gotten food on my underpants!

I had the most amazing pumpkin risotto as well this past weekend at a local restaurant with a friend...never had it before and can't believe how yummy it was!
2001 - moved to the UK on a student visa
2002 - 2 year work visa (and met hubby later that year)
2004 - moved w UKC hubby to US
2012 - UKC hubby now a dual national (USC)
Apr 2015 - moved back to UK w DH and two DD

Fried rice for hubby and veggie chili for me. He is on a fried rice kick, and much as I love it, I can't eat it 3 or 4 times a week some weeks.  :P

Veggie lasagna with carrots, mushrooms, eggplant, zucchini. spinach, red, yellow and orange bell peppers and red onion. And fat free mozz cheese. Hope that doesn't ruin it for me.  ::)

I always forget to post. But tonight, since we are having a cheat day on the diet, we are having meatloaf and mashed potatoes. We weren't going to have one until Thanksgiving, but since we are having beer, we felt restricting ourselves tonight was silly.
