Roast chicken here.  With mash and sweet corn.  No one is particularly hungry though, so seems like a bit of a waste of energy!

Made spicy chickpea stew over potatoes last night

Tonight, made grilled chicken breast, rice, roasted brussells sprouts/carrots/leeks/cabbage, and gravy

My husband is making a stew with the good garlicky Polish sausage, potatoes, and a bunch of veg we need to use up before our box comes tomorrow morning. I'm still not feeling well so I'm glad he's stepped up to the task (and that there will likely be leftovers for my lunch tomorrow, too).

Leftovers from our roast dinner last night.  I really wanted to make it into chicken noodle soup but I was vetoed.  :P

Pioneer Woman's sour cream enchiladas.
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

Pioneer Woman's sour cream enchiladas.

How were they?? I was planning on making those within the next week. They look great!

We wound up having sloppy joes, carrots, and (homemade) oven chips because we had a change of plans to our dinner on Saturday - and got kebabs with the in laws. 2 days late, but delish!
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

Pioneer Woman's sour cream enchiladas.

How are they different from her other enchiladas?  I'm charged with introducing a friend to 'real' Mexican food, and PW's simple enchiladas is one recipe I'm considering making.

Haggis, tatties, and neeps since it's Burns Night, though I will be having a veggie haggis because I'm just not that hardcore.  :)
