And now, saying that, I would like to point out how much more convenient my life will be when I eventually have a kitchen (and my dishwasher installed), so I can have two bowls of this size.  Luxury!

My Taco Bell thingies were so satisfying!  I probably don't need to go back to the US anymore.  I have re-created most of the foods that I miss at least once, so now I know it can be done if I'm desperate enough (those eggrolls were a lot of work!). 

"Chick 'n fennel"* with sprouts and hopefully-creamy mash (my potatoes haven't been creamy in weeks, and I don't know why).

* Originally, this dish was called "Chick 'n chicory", but I can't easily get chicory here, so we often have fennel as an alternative.  I wanted to grow some, but I also couldn't get chicory seeds because of the Pandemic... next year will be better.

Also, I finally got around to using up those really gross-looking bananas.  "Banana Cake" (normal banana bread, but my husband calls it cake) will be ready to come out of the oven soon. 

Have you bought a different type of potato than normal?
Some potatoes are more starchy and good for chips /crops/roasters and others break down easier and are more creamy.

Pork chop & salad last night.

I got some really nice-looking tomatoes at Aldi, so planning a bacon/tomato/mayo on soft squidgy white bread sandwich tonight.

Sadly, it's not as good in real life as it looks on the internet.  I did have a bunch of marinade left over so last night I did roughly the same recipe with pork belly and it was pretty good. 

Also, I finally got around to using up those really gross-looking bananas.  "Banana Cake" (normal banana bread, but my husband calls it cake) will be ready to come out of the oven soon. 

  I want to make bannana bread and even bought twice as many banannas this week in the hopes some would be left over.  No luck, the kids just ate all of them. 

I've just made Christmas Apple Crumble.

Normally I wait until June (you can only head away from Christmas for 6 months before you start heading towards it again) but I wanted to try the recipe.

It turned out fab!

Yo Ho Ho!

Yesterday i went to Partick for my beer click & collect.  On my way back, i noticed there is a new Chinese supermarket that wasn't there the last time i was in Partick... and it was open!!  So i went in and got a bunch of stuff, including some bags of frozen dumplings.  So my tea tonight is going to be potstickers!!   

I had keto (wheat and sugar free) garlic naan and marinated pig hearts.  Keto chocolate cake for dessert.

It was my first real foray into organ meats. I picked a good one.  It was absolutely delicious. And not icky looking at all.

Pig hearts sound awesome to me!

At first I was pretty grossed out by the idea, then I remembered that I've eaten feet, face, ears and tail from a pig.

Baby back ribs tonight (cooked in instant pot, finished on bbq), and decided I'm making Greek lemon potatoes to go with them. Looking forward to it! Lockdown has led to some really amazing dinners because I have to plan pretty far in advance and have the time to cook.
