Baked lemon chicken, fresh green string beans in butter, and Idaho russet potatoes, baked. (It's a lazy meal, very little prep.)

We call these 'can't be arsed meals' and they're my favourite. Healthy, easy, tasty, lovely.

We'll be having "deconstructed chicken kiev" later, but right now, tears of joy... we have just had our second cheese platter since the pandemic.  One was on my birthday last week and the second one was tonight.  I actually prepared two separate platters for each night and passed one platter to my husband.  We ate our nibbles while watching a YouTube show "together" by synchronising our start so we're watching it at the same time.  It's almost like the Before Times.

JF - awwww, that's sweet.   :)

My baked chicken ended up being delivered Chinese food from a shop just up the road. It was... interesting. Very tasty. The menu on their website had things on it that were truly horrifying (fried duck heads, etc.) and the Daughter says it's a "real" Chinese restaurant from what she could read of the kanji. We had Mongolian beef and chicken with green beans. Both were made with very fresh veg. Not sure what that spice that was in the beef was, but both of us now have very clean and clear sinuses and lungs.  (!)  Thank goodness we had some flavored San Pellegrino in the house to cut through that burn.

And they sent enough for each of us to have three meals each out of it. So I don't have to cook two more meals.

I've just made a giant batch of brownies.  Tonight is gammon, mash and courgettes.

I have been loving that Leon's has grocery items now, so we had their waffle chips and chicken pieces w/ tasty sauces for dinner. Its not cheap, but since we are not spending money on petrol or takeaway it's nice once in a while.

Tomorrow is going to be mashed potatoes I grew and instant pot chicken and gravy. And garlicky greens because I can eat real food again after a short time on cannabis oil. I haven't been able to eat salad or fibrous veggies for a long time so it's kinda a miracle to me and I hope it continues!

I made homemade "Big Macs".  They were surprisingly convincing!  Like a really good McDonald's.  Next time (and there will be a next time!), I'll be less stingy with the sauce, and there will be more lettuce and more pickles.  But the flavours were all right*.  It just needed more.

* Right after I finished assembling them, I remembered that the sauce is slightly different in the UK, and I had aimed for the US version.   I liked it, but I might add some horseradish for my husband next time.  That's the flavour element he would know.  But it was right for me.  :)

I'm going to be making some Spaghetti Bolognese tonight. Ever since moving here, I have grown quite fond at making my own Bolognese sauce (I guess it is the Italian in me lol.) I think I may have finally gotten the sauce just right (made it last week and my husband said it was perfect!)

That looks really nice, but your talents are wasted on Big Macs.  You should be making Taco Bell!  You never forget how to ride a bike

On Saturday (Sunday? the days all run together now), I tried to do nacho bell grande bowls, but the "nacho cheese" I bought was not nacho cheese.  I miss that Herr's cheese dip I got from the first round of Pass the Parcel (thank you!).  I was able to find it a few times at one of the grocery shops (Tesco?) for a while, but now I can't find it.  But it would've worked for my nacho bowls.  Instead, I had to just grate some cheddar on top, and that's not the same.

Anyway, no photo, but I bought a bag of these tortilla chip bowls, and filled them with refried beans, seasoned beef, grated cheddar, teensy tiny diced tomatoes, teensy tiny diced jalapenos, and a tiny splodge of creme-fraiche-because-that's-my-sour-cream-now.  Nacho cheese would've been better, but they were still quite tasty.

Seafood risotto tonight.  It's a great meal becuase you have to add wine while you cook so the wine is handy.  And you throw in a ton of pesto and parmasan cheese and it is yum yum
