Tonight, I'm planning on doing a root vegetable korma (except it'll be a bit spicy as well as creamy) a la Nigel Slater.  We've got parsnips, carrots & swede for me to put in it.

Having parsnips, carrots, and swede in my house - and leftover lamb-

I made a root vegetable and lamb korma tonight as well- because that sounded so good! 
I've never gotten food on my underpants!

We had it again tonight!  Ours didn't have meat in it, but it had some cashews in it.  Those root veg sure do love the curry spices & the cream/yoghurt.  The Nigel Slater recipe I used said it was 'enough for 4 servings - with rice or naan' - but holy moley, it made so much - I think it would have fed 6!  I followed the recipe ingredient quantities.  There's still some left over, which I'm taking for my lunch tomorrow.  :)

We threw in cashews and peanuts (I had a bagged mix) on top of our Thai version to serve! So yummy!  :D I had leftovers for lunch today.

Mmmmm!  Well the curry is finally all gone.  DH is cooking tonight - something involving sausages that I set out of the freezer this morning - probably some variation of bangers & mash with veggies.
