Could you do crock pot pulled pork? Then have chips/dips/guacamole and just heat up some tortillas?
Or maybe some chilli and have rice/tortillas/chips/dips for everyone to help themselves.
Or you could do a big pie, maybe chicken/leek/bacon or steak/ale, use shop bought pastry and it's nice and easy.
How about a glazed ham? So many offers on gammon joints around at the moment and it's super easy to do, you could serve it with coleslaw, potatoes (au gratin

) and salad. That would be pretty light and any leftovers could go into sandwiches

It's minimal work for you as well
