American Biscuits and Breakfast Sausage

I know there are a few threads on American biscuits and breakfast (Italian) sausage (not the links kind).  Can you give me your favorite tried and tested recipes for the UK?

I'd be interested in this as well since my sister in the US is supposedly sending me a few packets of sausage flavoured country gravy mix and I've been craving biscuits & gravy.

I use pork mince...and season it was sage, chili flakes and black pepper..have added other seasonings.....brown it off and then remove and use any liquid to make the rue with sometimes I  have to add oil to make it work with the flour as well....

I have poultry seasonings that I have and use that sometimes as well.

To be honest, for the sausage I just chuck any old thing in, and it seems to work out well, you can always pinch off a tiny bit and fry it to see if they taste good.

I do HST biscuits and they come out really well, you need to crowd the baking tray so they rise upwards rather than outwards and also don't forget about them like I did with the batch below!

Here's some I made last year with cheddar as boy really wanted cheddar biscuits, they were really nice.

American Breakfast Sausage (similar to Jimmy Dean)

Hot:
16 oz pork mince or sausage meat
1 tsp salt
1/2 tsp cayenne pepper
1/4 tsp sage
1/4 tsp black pepper
1/4 tsp red pepper
1/4 tsp ground coriander

Sage:
same as above, but skip cayenne and red pepper and add 1/2 tsp parsley and 1/4 tsp thyme

Maple:
16 oz pork mince or sausage meat
3 Tbsp maple syrup
1 tsp salt
1/4 tsp ground coriander

Like others have said, if I don't have something to hand, I just throw in whatever and it usually turns out fine! Just mix, shape into patties, and fry!


Biscuits (courtesy of Meg!):

2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 Tbsp sugar
6 Tbsp cold butter
3/4 cup buttermilk or cream

Mix dry ingredients, cut in butter (I just blend everything in my food processor), then add the wet ingredients. Then toss out on a floured surface, roll them out, then you can use a glass or other cutter to cut them into rounds and put on a greased or lined baking sheet.

Thanks guys!  I will definitely give some of these a try.  I've never made sausage or biscuits in my life so it should be interesting!

OK girls...I tried the recipes out this morning!  YUM!

I tried the sage sausage recipe and I doubled (kinda tripled) the measurements and it still wasn't "herby" enough for me.  Next time I'll probably just dump in a tablespoon of each and maybe throw in some other stuff I like too!  It was yum though.  Even DH (the pickiest eater in the entire world who never likes to try anything new) said it was "pretty good".

I had to use butter to make my gravy because the pork was so lean that there was literally no grease left at all.  I even tried to add a little oil to the pan and nothing.   >:(

I used the link cheesebiscuit had for the biscuits.  I had to make my own buttermilk since we didn't have any and we were both to lazy to walk to the shop  ;D.

My biscuits didn't rise as much as I would have liked (they weren't flat but just not hugely fluffy).  I used self-rising flour (wasn't sure what kind to use so went for that).  They seemed just a tiny bit bland...maybe I needed to put in a little more salt.  I loved the way you fold the dough over so they fell apart perfectly in the middle!  I should also mention that I don't have a rolling pin so I used a glass...and I also "guess-timated" the measurements ("Umm...yeah that looks like 8 tblsp of butter").

Overall it was a big success for my first time ever making either one!  Now I know what to tweak and it will be a real treat next time around.

Glad you enjoyed it! If you are finding the pork mince to be a bit lean, you can always buy sausagemeat instead, which would probably have more fat. You can buy it at any supermarket or at your local butcher, especially this time of year!  :)

I made something similar to this and my husband insisted on calling them scones!
that is because they have sugar in them! Try this:

2 cups flour (sifted 3 times better yet use cake flour)
2 1/4 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda

6 tablespoons butter room temperature

3/4 cups buttermilk

Preheat oven to 400 degrees

sift dry ingredients together 3 times then cut in the butter (I use a pastry cutter but you can do it with a fork or 2 knives)

add buttermilk

mix together then place on a floured wooden board and knead until dough is elastic not too wet

pat out to the thickness of your liking and use a biscuit cutter if one is not available you can use cookie cutters in various shapes (I do not beat my biscuits either as recommended in the other recipe, mine the less you handle them the better and the higher they will rise)

Bake at 400 degrees for 10-12 minutes my oven cooks hot so I bake them at 350 or the bottom gets too brown

You can brush with milk or butter before baking if you prefer

I do not add sugar to my biscuits because to me that would be a scone not a biscuit

I will post a pic next time a bake a batch

Rasin Tea Biscuits (or black currant) hehe

2/3 cup raisins
 1 cup hot water
 3 1/4 cups all-purpose flour
 3 tablespoons white sugar
 1 tablespoon baking powder
 1/2 teaspoon salt
 3/4 cup cold butter, cut into pieces
 1 cup milk
 1 egg
 1 tablespoon water

Preheat an oven to 375 degrees F (190 degrees C). Soak raisins in water for 10 minutes; drain and set aside. Line a baking sheet with parchment paper.
2. Whisk together the flour, sugar, baking powder, and salt in a mixing bowl. Cut in the butter with a knife or pastry cutter until the mixture resembles coarse crumbs. Stir milk into the flour mixture until moistened. Add the drained raisins. Turn the dough out onto a lightly floured surface and pat or roll the dough out into a 3/4 to 1-inch thick round. Cut dough with a biscuit cutter and place onto the prepared baking sheet. Beat the egg with 1 tablespoon water in a small bowl. Brush egg mixture on each biscuit.
3. Bake in the preheated oven until golden brown, about 15 minutes.
