Minced Chicken
« on: January 10, 2011, 06:37:04 PM »
Has anyone seen minced chicken in the shops at all? I asked my butcher if he would mince some chicken breasts for me and he was like...uh, no. But I have a bunch of recipes I want to make that calls for minced chicken.

Has anyone done it in their food processor? I am a bit chicken as I fear I might make chicken soup!

I've not seen minced chicken, but our CoOp & ASDA carry minced turkey.

If you own a Kitchen Aide mixer, there is an attachment you can buy that minces meat. I don't have a food processor, so I'm not sure how that will work!

As weby suggested, turkey mince is everywhere, and so is pork mince. As I can't digest red meat, we use both interchangeably for beef in recipes - burgers, bolegnese, meatballs, Lasagna, chilli, tacos, you name it. Turkey mince is also stupidly cheap, too, so you haven't lost much if it doesn't taste 100% the same.

Gak! As much as I would love all the gadgets to go on my Kitchenaid mixer...I don't think I would use is that much! I think I might get some Turkey mince this week. Its for my 10 month old daughter, she is one of those babies that puts anything and everything in her mouth on the slim chance that it might be food (oh and do her eyes light up when she does get some found food) so I don't think she will know the difference. Thanks everyone!

See, I think I would use it if I had it. I like to use chicken mince as it's way low fat. The problem with the turkey mince here is it's not all white meat, so it's not as low fat as it could be. In fact, if you compare it with low fat ground beef, it's often higher.

You're right though, if it's just for your 10 month old, I'm not sure she could tell the difference!

I'd just whizz it up in the food processor - I'm sure we have done that before for something.  :)

Yes, I think the ground turkey here usually has skin and dark meat in, as well, which means the extra lean beef is lower in fat and calories, normally. Otherwise, I'd use it more often! I wonder if you can get ground white meat turkey from the butcher? (Maybe not, since racheeee can't get ground chicken!)

Waitrose/Ocado sell minced turkey breast -
http://www.ocado.com/catalog/images-hires/38491011_H.jpg?identifier=adea092c5f44d3f2cc5c7f60364dec24

pretty low in fat :)

Protein              24.4g
Carbohydrate      0g
of which sugars      0g
Fat                      0.8g

Fibre                      0g
Sodium              0.05g

If you put chicken breasts in a food processor wont you make paste rather than mince? It will be more like a pate then the same texture of ground beef. Cutting it up finely wold probably work better.

You can buy packs of frozen chicken mince on amazon mmmmm  ;D

I was wondering about this the other day as I have a recipe that calls for minced chicken and I don't remember seeing it anywhere.

I really dislike turkey unless it's all white meat (don't mind dark chicken though) so I don't think I could go that route.

I really really really love minced pork though...use it ALL the time as DH really dislikes beef and once I tried the minced pork I fell in love with it!

One thing bothering me about mincing your own chicken in a food processor is salmonella. And it might explain why the butcher is reluctant. It seems you would want to clean the heck out of the thing before you processed anything else.

The only place I have ever seen chicken mince is at Pets at Home (made for dogs). Unfortunately after cooking it up for my dog, it wasnt even suitable for canine consumption so you certainly dont want to be feeding any humans.  Bummer there isnt a human grade version around.

I had one of those attachments back in the States and used it ALL the time. I used it to mince lamb for kufta kebabs. You can throw the onion and herbs right in with the meat and presto! it's done quicker than a blink.

i have minced chicken in my magimix food processor, and it worked fine.  i didn't want a mushy product, so i pulse until it's the consistency i want.  i do sirloin this way for burgers as well.  i put the bowl and blades in the dishwasher, so there is no safety issue.

I have minced chicken in the food processor before.  I did it nearly frozen (probably not necessary) and you just pulse to get your texture.
