Huevos Rancheros...Where have you been all my life?

I have never tasted anything so good, especially cooked "Tyler Florence" stylee with kidney beans and chorizo, some ancho and chipotle chillis from Mexgrocer to make red sauce and Ho-Ha it's ON!!!

My latino-american husband introduced me to the FAB dish, although I still can't manage it before 11am as he tells me its breakfast!

Just thought I would share to love.  ;D

Hmmm, am salivating right now lol. I love and miss good mexican food so much! and I mean real mexican food, not Taco Bell (I've lived in Southern California and Texas).

Does your partner make homemade corn tortillas too? I wanted to make some, but I bought the wrong kind of corn flour (should be masa harina). Unfortunately, I don't live in London so it would be hard for me to go to that Mex Grocer store  :-[

Ask him to make you some fish tacos and chile verde (made with tomatilos). I may have to live vicariously through you now  ;D

My mom made these for us when they visited last year. Very yummy but it totally doesn't seem like a breakfast dish to me. Give me a breakfast burrito any day!

My mom sent me a few cans of those chipolte chilies in adobo sauce. I've got about three in the cupboard but not all that sure what to do with them other than put them in a chili.
There are two things in life for which we are never truly prepared:  twins.

Mmmm huevos rancheros!!!! Oh, how I miss them! ;D Ask your DH to make you some chilequiles. I'm not brave enough to try making them, yet, and I like living vicariously as well! ;D

Ladies....I wil indeed ask him to cook my your suggested dishes, although Salboo I have had salsa verde with Tomatillos, Chicken Enchillada Suiza..Rachel Ray Stylle (He has me hooked on all these FAB American Celebrity Chefs...Paula Deen being THE QUEEN YAY!!)

Sal, Mexgrocer is on line they sell that stuff for homemade corn tortillas AND they also sell em ready made, they are "DA BiZZNEZZ"...sure kinda "spensy" BUT we buy in bulk and you get so many great, cheap meals out of em. Last us ages, Tostadas, Soft Tacos, Hard Taco shells , we even fry em up and put em in an Omellette...Soooo good.

Anyway you have all managed to make me suitably peckish *goes off to Fridge* ;)

I've thought the very same thing as the subject of this thread.

Despite being born and raised in California and thus having access to much tasty Mexican food, I didn't have Huevos Rancheros until this past year. All those years of not eating Huevos Racheros...wasted!  :)

Oh man! I know what you mean -- I am from Southern Arizona and cannot for the life of me understand why people would eat Taco Bell when there is SO much good, real, authentic Mexican food around!

and with that said... I miss Mexican food so much! Especially a good breakfast burrito or some nice fish tacos :) I've got some good recipes for Mexican food that I'll cook here from time to time, but my problem is the unripe, expensive avocados here. I find it takes about two weeks for them to ripen, and then they're gone within a couple days. ARGH!

ASDA have just started doing "ripe" avacados you get two in a wee cellophane bag, and they are good to go. :)

Yeah my hubby TRIED to make huevos rancheros and totally "epic failed" as my daughter would say  ;D This was before he discovered mexgrocer of course. I had also tried to make him some chilaquiles and they were a disaster as well  :-[ It's all about having the right ingredients  :)

Hey so I ballsed up the salsa.... badly... and it was NASTY :p we didn't get the chilaquiles right WITH the right ingredients, although I DID love 'em  ;D
