Peach Cobler

Hi,

Bought some lovely peaches at Costco the other day and want to use them up before going off.  (Only me that will eat them in the non-cooked form  ::))
Thought about making a Peach Cobler, but don't have a recipe, anyone got any suggestions??

PEACH COBBLER (an American based recipe so if you're in the UK, you'll need to convert to UK measurements)

6 large peaches, peeled and cut into thin wedges
1/4 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon cornstarch

For biscuit topping
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
3/4 stick cold unsalted butter, cut into small pieces
1/4 cup boiling water

 
Cook peaches:
Preheat oven to 425°F.

Toss peaches with sugar, lemon juice, and cornstarch in a 2-qt. nonreactive baking dish and bake in middle of oven 10 minutes.

Make topping while peaches bake:
Stir together flour, sugar, baking powder, and salt. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.

Remove peaches from oven and drop spoonfuls of topping over them. Bake in middle of oven until topping is golden, about 25 minutes. (Topping will spread as it bakes.)

Serves 4.

Here is a variation on balmerhon's recipe.  We have a bunch of people in the family with wheat allergies, so this is often used as a birthday cake.  You can use single fruits and combinations such as strawberry and rhubarb, apples, peaches, mixed berries, and even prunes and oranges---a surprisingly good combo.

FRUIT CRUMBLE

enough fruit to fill the baking dish about 3/4 full
1/4 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
1 cup oatmeal or porridge oats
1/2 cup brown sugar
3/4 stick cold unsalted butter, cut into small pieces

Preheat oven to 325°F.

Toss fruit with sugar, lemon juice, and cornstarch in a 2-qt. nonreactive baking dish.
Stir together oats and sugar. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal.  Sprinkle topping over fruit.  Bake in middle of oven about 45 minutes.

Serves 4.

Mmmm, you guys are making me want to BAKE!!! Raspberries are fantastic with peaches and I've seen some gorgeous raspberries in the markets lately! I always throw a couple of handfuls of raspberries into my peach pies! Mmmm. Pie.

made the Peach Cobbler and it was  a success!! thank you for the recipe!!  I loved how  easy  it was!!
