Elderberry Wine

Am wandering the food isles, starting from the back and going forward and finally decided to just save recipes instead of making comments in order to save here.
(Otherwise I would have commented on over 35 posts  ;D)
I did see a link for cookbook section, but alas, it did not work.

Is it just my connection or has it been taken down?

Anyhow......
one particular item I have yet to see is Elderberry wine, as in how to make it.
(I think it is elderberry? <it might be alderberry, of course> white berries on a bush which become flowers?)
We have at least one of these bushes in our yard and my husband has told me that this can be used to make wine....I would like to surprise him, though I have never even tasted any.
Does anyone have a recipe?
(I am sure I have missed this season's crop)

It may take me another week to return to see if anyone has replied...(I have a plane ticket to buy, clothes to pack, etc..  [smiley=2thumbsup.gif])

There are two options, Elderflower and Elderberry.

Elderberry isn't that popular the flavour I understand is on the strong side. Most people make Elderflower cordial or Elderflower wine which is  lighter. Do a search there are loads of recipes for Elderflower.

You use the white flower heads as the base for the flower drinks, and the black/red berries as the base for the berry drinks, if you can get them before the birds.

I've made elderflower champagne and cordial. Love both.

Last year, I made elderberry wine and a liqueur. I haven't tasted the wine yet, as you're supposed to age it at least a year before bottling.

The liqueur I made by soaking elderberries in vodka for six months, and then added sugar to taste. I tasted a thimbleful of it. It was delicious, and fifteen minutes later I was yakking it up in the toilet. Most unlike me.

It's hard to see what sort of bacteria could take hold in a jar of vodka, so maybe I have a sensitivity to elderberry. Makes me ever so anxious to try the wine.  :-X

Great...I look forward to using the elderflower.
I will probably pass on the Elderberry, though and ty for that.

my husband has loved living here and making wines from all of the (free) hedgerow fruits and flowers--he has kept us in constant supply   :)
it isn't hard, there are some good books out there.  elderflower, elderberry, blackberry, currant, gooseberry (this one was really nice). he adds raisins and even banana to make the flavours more complex and by mixing berries you can get some nice wines too!   good luck

We made the elderberry wine one year. I quite liked it -- as a cordial.
