Homemade Ricotta Cheese

Went to the farm shop today and noticed they alot of milk reduced (sell-by date tomorrow), so i got it, went up to check out and told them i was experimenting with the milk so they gave it to me.  got home and made ricotta cheese and it has turned out really nice! Quite impressed with myself  ;D

Making cheese is fun, isn't it? :) I made some last fall to this recipe and it was ridiculously easy...

Strained yoghurt cheese is so amazingly easy to make and is like the best spread ever.   Has anyone else tried it?  I've used the Nourishing Traditions method.

I had considered doing this, because at least once/week, we see reduced milk for something silly (last night it was 9p).  I've been considering making cheese, but can't find any "rennet".  Do you need anything special to make ricotta? Citric acid or anything??

I'm pretty sure you'll need rennet or something at least to separate the whey from other milk proteins since ricotta is a whey cheese.  It's name litterally means "re-cooked" since it's made from the by-products of regular cheese making and the whey is left over after the initial heating.  http://en.wikipedia.org/wiki/Ricotta

Seems like it might be more of a time-intensive process to go through even with the really cheap price of the milk!

Just milk and either vinegar or lemon juice. ;) I linked to a recipe in my earlier post.

It was very similiar to squirrellypoo's link, i used white vinegar instead of lime juice though. It didn't take long and yes, it might be easier to go to the store and buy it, it was nice to make it!

That sounds quite good after reading the recipe that squirrellypoo linked to.  However, your cheese is more akin to the likes of halloumi which is produced in a very similar way.  I'm sure you could probably even make your own cow's milk halloumi with a bit of mint and brine following that method!  I'll have to try it out, but i'm sure my partner will squinch up his nose and ask what kind of science experiment I'm up to in the kitchen haha.
