Whoopie Pie Recipe Anyone?

The Betty Crocker Whoopie Pie adverts have gotten to me and my family. I have never been a large whoopie pie fan but I broke down and got the mix (our asda only has the one with chocolate filling though). After having a go with the mix I thought- certainly I should just make these from scratch! Anyone have a nice, tasty, easy whoopie pie recipe they would like to share. Hopefully one with ingredients easy to get in the UK :)

US measurements
1 (18.25 ounce) package devil's food cake mix
 5 tablespoons all-purpose flour
 1 cup milk
 1 cup shortening
 1 cup white sugar
 2 teaspoons vanilla extract


To make the cakes: Prepare mix as directed on package except using only 3/4 cup of water. Drop batter onto greased cookie sheet (or use parchment paper to line pan) in 2 1/2 to 3 inch circles. Bake until toothpick inserted in center comes out clean. Let cool.
2. To make the filling: In a saucepan, combine milk and flour and cook, stirring constantly until it forms a thick paste. Let cool.
3. In a medium bowl, beat sugar and shortening until fluffy. Add vanilla. Add cooled flour mixture and beat until double in volume.
4. Turn the little cakes over on their backs. Spoon a dollop of filling onto half of the little cakes. Place the other half of the cakes on top of the filling to form sandwiches.

Metric measurements
 
511 g devil's food cake mix
 40 g all-purpose flour
 235 ml milk
 205 g shortening
 200 g white sugar
 10 ml vanilla extract

I made chocolate with salted caramel filling.  I think the recipe was somewhere online.  I will scare it up. 

I did think the filling was a little gooey, it needed to be refrigerated well.

Stop the press.  It was pumpkin whoopies with salted caramel.  Filling was still quite gooey.  :)

I also made chocolate ones with a simple cream cheese filling (basically cream cheese with a splash of vanilla and powered sugar to taste).

I have entertained the idea of making whoopie pies but haven't done anything about it yet!  Also interested in seeing UK-converted recipes as well & made completely from scratch.  A couple I just found online:

You beat me to it! I was coming in here to post this, it's AWESOME! And bakingbites.com is like my favouritest food blog ever - I've made like 80 of her recipes and everything's turned out exactly as expected. :)

Is this maybe a regional thing? Before I saw the Betty Crocker commercial, I had never even heard of a whoopie pie (never seen them in the US either). What's the filling made out of? If it's marshmallow, I'll take a pass.

It is a regional thing..very popular in the pennsylvania dutch area, but know other areas too. Seems to be a variety of fillings, some are more buttercream like and some more marshmallow.

They served whoopie pies regularly in the company canteen where I worked, outside Boston. First I'd ever heard of them.

Their brand was chocolate with marshmallow-y stuff in the middle. Never warmed to them, myself, but seeing the name gave me a little pang.

If anyone is interested in more exotic whoopie pie flavour combinations, a friend of mine from college who writes a lifestyle blog recently finished a year-long project where she baked a new whoopie pie each week and had her friends and colleagues critique them.  I don't think she posted any of the recipes, but I'm sure she would if you asked.  Her blog is www.iwannabeadomesticgoddess.com, and if you click on Whoopie Pie Wednesday in her word cloud, you can read all the posts from her project.

That sounds incredible!!

But, to me, it's the flavour combination that's so great, not the fact that they're whoopie pies. I'd be more tempted to make pumpkin cupcakes with a shot of salted caramel in the middle. Hmmm ... time to experiment!!  :)

I never heard of whoopie pies either until I moved over here & learnt they were an American thing - ha!  :D

For a quick fix, Cooperative sells a package of 4 chocolate whoopie pies with some kind of vanilla filling that are actually pretty decent - I've taken them as pudding to a friend's here for dinner before & they all raved about them.

I am PA Dutch, so I enjoy my whoopie pies.

I would say the filling I have had is not usually marshmallow, although it can be.

I'm sure that helps about 0%. ;D

Whoopie pies seem to be big in Maine.  I was there this year and bought a bunch of different flavors.  I am a huge fan of salted caramel, so I will be trying that recipe at some point.
